Christmas Mini Tartlets Crust •1 ⅔ cups all-purpose flour •½ cup icing sugar •A pinch of salt •½ cup unsalted butter, very cold and cubed @paysanbreton_international •1 egg Filling •Strawberry jam, or any jam you like •100 g white chocolate •100 g heavy cream (35% fat) @paysanbreton_international Method: 1.In a food processor, mix the flour, icing sugar, and salt. Add the cold butter and pulse until you get fine crumbs. 2.Add the egg and pulse again until the dough comes together. Shape it into a ball, roll it out between parchment paper to about 4 mm thick, and chill for 1 hour. 3.Grease the outer sides of cupcake molds with butter. Cut dough discs using a round cutter and place them over the molds. Freeze for about an hour, then bake at 160°C for 20–30 minutes, until golden. Let cool completely. 4.Spread a thin layer of strawberry jam inside each baked shell. 5.For the ganache, heat the cream until just boiling, then pour it over the white chocolate. Stir gently until smooth and glossy. Let it cool at room temperature for about 15 minutes, until slightly thickened. 6.Divide the ganache into small bowls. Tint a little with green and red food coloring. Pour the plain white ganache into the tart shells. Using a fine piping tip, draw small green leaves around the edges to form a wreath and add tiny red dots for berries. 7.Refrigerate for 3–4 hours until set.

Salmon en croûte canapés A pescatarian canapé which also impresses everyone… one of my favourite salmon dishes but in cute little pastry cup form. YUM! makes around 15 1 sheet puff pastry @jus_rol 2 lightly smoked salmon fillets (I had about 1/2 a fillet leftover) 1 shallot 1 large garlic clove 2 big handfuls spinach 120g/ 1/2 cup cream cheese 1-2 tbsp fresh dill 1 tsp lemon zest 1 tsp lemon juice 1-2 tbsp milk @theestatedairy 1 big pinch salt + pepper 1-2 tbsp chopped chives Pre-heat oven to 180C/ 350F. Place your salmon fillets on to an oiled baking tray, drizzle with some more oil and get into the oven for 15-18 minutes, until cooked to preference. Cut rounds of puff pastry with insides indented (press the middle circle slightly in, not the whole way) and egg wash. Bake for 15 minutes, until puffed and partly golden. Whilst that is baking, get a frying pan on medium-high and add 1 tbsp butter with chopped shallots. Cook for around 5 minutes before adding grated garlic and spinach. Cook for a further few minutes before adding cream cheese, lemon zest, juice, dill, salt + pepper. Add the milk to loosen. Taste and season further. Press the middle of the pastry in with the back of a spoon and fill with your creamy mix. Top with flakey smoked salmon and finish with some chopped chives. They look as if they came straight from a French patisserie.🥰 📝 Ingredients (for 4 tartelettes, Ø 9–10 cm) For the shortcrust pastry: • 150 g all-purpose flour (1 ¼ cups) • 75 g cold butter, cubed (5 ½ tbsp) • 50 g sugar (¼ cup) • 1 egg yolk • 1 tbsp cold water • 1 pinch of salt For the filling: • 4–5 tbsp fruit jam (e.g. homemade plum jam or any jam of your choice) For the pastry cream: • 250 ml milk (1 cup) • 2 egg yolks • 40 g sugar (3 tbsp) • 20 g cornstarch (2 ½ tbsp) • 1 tsp vanilla extract • 30 ml heavy cream, liquid (2 tbsp) For decorating: • about 100 g fresh blueberries • about 100 g fresh raspberries • a few hazelnut slices • powdered sugar for dusting 🤍 Instructions 1. Mix flour, sugar and salt. Add cold butter and rub into crumbs with your fingertips or a mixer. Add egg yolk and water, then quickly knead into a dough. Wrap in cling film and chill for 30 minutes. 2. Preheat the oven to 180 °C / 350 °F (top/bottom heat). Grease the molds. Roll out the dough and cut circles for the bases. Cut strips for the sides, measure them and place into the molds, pressing them gently with your fingers (not too firmly). Prick the base with a fork, line with baking paper and fill with baking beans. Blind-bake for 15 minutes. Remove the beans and bake for another 15 minutes until golden brown. Let cool completely and carefully remove from the molds. 3. Heat the milk with vanilla extract. In a bowl, whisk egg yolks, sugar and cornstarch. Slowly pour in the hot milk while stirring, then return everything to the pot and cook, whisking constantly, until thickened. Transfer to a bowl, cover the surface with cling film and let cool completely. Once cooled, add the 30 ml liquid cream and beat with a hand mixer until smooth and creamy. 4. Spread jam over the cooled tart bases. Spoon pastry cream on top and smooth it out. Pipe lines from each petal edge toward the center, creating a flower pattern. 5. Decorate with blueberries, raspberries and hazelnut slices. Dust with powdered sugar just before serving. A charming, fruity and creamy delight 🤍

Puff Pastry Fruit Basket🫐 Ingredients: •1 sheet puff pastry •Egg wash For the jam •1 cup raspberries •1/2 cup sugar •1 tbsp lemon juice For the custard cream •2 cups whole milk •1/2 cup sugar •3 tbsp cornstarch •1 pinch of sea salt •4 egg yolks •2 tbsp unsalted butter •Flavoring (choose from 1/2 vanilla bean, 1 tsp vanilla or other flavored extract, a few peels of citrus, 1 tsp orange blossom water, etc.) For the topping: •Fresh berries •Powdered sugar for dusting •Edible flowers Method For the Baskets: 1.Preheat oven to 190°C. 2.Cut puff pastry into rings. From half, cut smaller centers to form rings. Stack ring pieces onto full rounds, pressing gently. For extra height, add a third layer using egg wash. 3.Place on a parchment-lined tray, brush with egg wash. 4.Bake for 20 minutes or until golden. Cool completely. For the Handles: 1.Cut puff pastry into 3–4 mm x 10 cm strips. Twist into spirals. 2.Arrange on a tray, brush with egg wash. 3.Bake for 10–12 minutes until golden. Raspberry Jam: 1.Combine berries and sugar in a saucepan; mash slightly.Add lemon juice, bring to a boil while stirring.Skim foam, simmer 15–20 minutes until thick. Custard Cream: In a pot, whisk yolks, sugar, cornstarch, salt, and milk.Cook over low heat, whisking until thick. Off heat, add butter and flavoring. Assembly: Fill baskets with jam and custard. Tartlet Recipe 🫶🍓 For the Dough: 125 g butter or margarine (room temperature) ½ cup powdered sugar A pinch of salt 1 egg Vanilla 2 cups flour (add gradually) For the Pastry Cream: 2.5 cups milk ½ cup granulated sugar 2 tbsp starch 2 tbsp flour 1 egg ½ pack heavy cream or whipped cream Optional: 80 g white chocolate Instructions: Prepare the Dough: In a bowl, combine flour, powdered sugar, butter, salt, vanilla, and egg. Knead until smooth. Chill the dough in the fridge for at least 30 minutes. Press the dough into tartlet molds and bake at 180°C (356°F) until lightly golden. Make the Pastry Cream: In a saucepan, mix milk, sugar, starch, flour, and egg. Stir constantly over medium heat until it thickens. Optional: Add white chocolate for extra flavor. Once thickened, remove from heat, cover with plastic wrap, and let it cool. After cooling, fold in heavy cream or whipped cream and beat until smooth. We all know the classic Tiramisu so let’s try something different: Tiramisu Cake Tacos 😍 In addition to the classic coffee and mascarpone flavours, this version has more textures and tasting elements, and it’s wrapped in a fun design in the shape of a cake taco 🌮 This is a recipe I made earlier this year and it’s still a favorite of mine, as these tacos are no less than irresistible! I really love all the textures in these cakes that have the best from a classic tiramisu, and some new elements that I think makes this into a redefined modern version of a tiramisu ☺️ The tacos consist of: - Chocolate Brownie - Lady Fingers soaked in Coffee - Mascarpone White Chocolate Ganache - Mascarpone Vanilla Whipped Ganache - Almond Amaretto Nougatine - Cocoa Shortcrust Taco Shells - Chocolate Decoration I also want to credit amazingly talented @amauryguichon who originally came up with the cake taco design that these cakes are inspired by!
