I am away next week & taking a week off work, no phone, no wifi, no social media… just books & family & swimming ☀️. Lavender Lemonade 🍋
Make a syrup, 1/2 sugar to water, I used 200g caster sugar & 400g water. Bring to the boil & add lemon zest, I used x3 unwaxed lemons. Add lavender, I used about 5 sprigs. Leave to cool. Add the juice of the x3 lemons. Bottle. This will last perfectly well in the fridge for up to a week, it won’t last indefinitely because fresh lemon juice, but you should easily get through it, dilute 1:3 & top with soda or tonic (if some gin fell in this might not be a bad thing?!), lots of ice & another sprig of lavender. Or, do as I do here & dilute 1:2 & freeze as ice lollies (again, add some more lavender, if you like 🌸)
Salted / pickled lemons 🍋
These are fairly £ to buy in the shops, so make your own. If lemons are your thing (& they’re mine, certainly) then having a salty citrusy lemony burst to add to all number of different dishes is a must. This recipe in my book The Art of the Larder & you need 1 tbsp coarse sea salt per fruit you plan to preserve + juice of one extra to help get the juices going. I added 3 bay leaves & 2 tbsp coriander seeds (these turn delightfully squishy when pickled in the salty lemon juice). Squeeze tight into a jar & leave well alone in a dark cupboard for at least a month, turn them every now & then & they will pretty much last forever stored in the fridge, but you’ll love using them so much, you won’t need to worry about that.

It can’t get much more powerful than riding a motorcycle on Iceland on black Vulcanic sand!
The thing about Instagram I missed the least during my social media break was the partly nasty comments. It’s weird because for some reason Instagram seems to be a bigger hub for trolls than my other social media Plattforms, where people indeed mostly are respectful and feel more like a community of like minded human beings.
So my biggest wish for my return to social: I hope this can become more a community too - with respect for everyone and love for traveling and all the wild places out there.
