You don’t need a new recipe. You need a better pre-bake ritual. Most baking “fails” happen before the oven even turns on. Here’s the prep that quietly levels you up every single time: 1. Read the recipe all the way through.** Not skimming. Actually read it. Look for chill times, room-temp ingredients, and order of mixing. 2. Check your ingredient temps. Butter should be soft but cool (about 65–68°F). Eggs at room temp. Cold cream if whipping. Temperature controls texture. 3. Weigh everything. Cups lie. A scale doesn’t. This alone will improve consistency overnight. 4. Preheat early and fully. Your oven beeps before it’s truly ready. Give it at least 10–15 extra minutes. 5. Prep your pans properly. Line with parchment, grease evenly, and tap out excess flour. This prevents sticking and dense edges. 6. Set up mise en place. Measure everything before mixing. Baking moves fast you won’t have time to search for baking powder mid-batter. 7. Sift or whisk dry ingredients together. It distributes leaveners and prevents flour pockets. 8. Clear and clean your workspace. Clutter slows you down and causes mistakes. Professional kitchens reset before every project for a reason. 9. Test your leaveners. If your baking powder or soda is older than 6 months, replace it. Flat cakes are usually dead leaveners. 10. Visualize the steps. Sounds dramatic, works like magic. I know some of you measure one cup of flour as 140g. But the principle is the same: Go with the metric system. Most baking recipes provide measurements in grams (g). Use them. If I ask 10 bakers to measure 120g (or 140g) of flour, all 10 will measure exactly 120g (or 140g). If I ask 10 bakers to measure 1 cup of flour, we’ll likely get 10 different answers. Why? Because cups depend on: • How you scoop • How tightly you pack • Whether you fluff first • The humidity • The phase of the moon (probably, but not really) Flour and other ingredients are compressible. Grams are not. Baking is science. Science needs precision. Ditch the cups. Trust the grams. Follow for day 3. #bakeandlearn #baking #bakingtips
