Biscoff chocolate chip banana bread 🍌✨ Ingredients - 3 ripe bananas, mashed - 113g unsalted butter, melted (1/2 cup) - 105g granulated sugar (1/2 cup) - 118g dark brown sugar (1/2 cup) - 250g all purpose flour (2 cups) - 130g sour cream (1/2 cup) - 130g cookie butter (1/2 cup) - 30g biscoff cookies, crushed (1/4 cup) - 2 large eggs - 2 tsp vanilla extract - 1 tsp baking soda - 1/4 tsp salt - 3/4 cup chocolate chips Instructions - Preheat your oven to 425°F (220°C). Grease and line a loaf pan. - In a large bowl, mash the bananas until smooth. - Whisk in the melted butter, granulated sugar, eggs, and brown sugar until combined. - Stir in the sour cream, vanilla extract, and cookie butter until fully incorporated. - In a separate bowl, whisk together the flour, baking soda, and salt. - Gently fold the dry ingredients and crushed cookies into the wet mixture until just combined do not overmix. - Fold in the chocolate chips until just combined - Pour the batter into the prepared loaf pan and smooth the top. Add more crushed Biscoff cookies and chocolate chips. - Bake at 425°F (220°C) for 10 minutes, then without opening the oven, reduce the temperature to 350°F (175°C). - Continue baking for 45–55 minutes. Brioche blueberry pull apart bread 🫐✨ Ingredients Bread - 435g bread flour (3 cups + 2 tbsp) - 68g granulated sugar (1/3 cup) - 185g whole milk (3/4 cup) - 60g unsalted butter, softened (4 tbsp) - 7g yeast (2 1/4 tsp) - 2 large eggs - 1/2 tsp salt Blueberry compote - 300g blueberries (about 2 cups) - 95g granulated sugar (10 tbsp + 2 tsp) - 1 tbsp lemon juice - 12g cornstarch (cornstarch slurry) - 2 tbsp water (cornstarch slurry) Icing (didn’t measure) - Confectioners sugar - Melted butter - Whole milk - Splash of vanilla extract - Splash of lemon extract Instructions Filling - In a medium sauce pan on medium heat combine blueberries, sugar, and lemon juice. Stir until well combined and cook until bubbling. - Add cornstarch slurry and stir constantly until very thick. - Transfer into a heat safe bowl, cover with plastic wrap, and cool for 10 minutes on the counter then refrigerate for 30-40 minutes. Bread - In a bowl, combine warm milk and sugar. Sprinkle yeast over the top, stir lightly, and let sit 5–10 minutes until foamy. - Add eggs, sugar, and mix again until well combined. - Add flour to mixture. Mix until a rough dough forms. - Begin kneading. Once the dough starts to come together, gradually add the softened butter (1 tbsp at a time), kneading until fully incorporated before adding more. - Continue kneading 8–10 minutes by hand or 5–6 minutes in a stand mixer, until smooth, elastic, and slightly tacky. - Transfer dough to a lightly greased bowl, cover, and let rise 1–1½ hours, or until doubled in size. - Punch down dough and roll into a rectangle about 12x18 inches - Spread filling evenly across the surface - Cut into strips, then stack and cut again to fit upright into a greased loaf pan (1/2 pound loaf pan) - Cover loosely and let rise 30–40 minutes, until puffy. - Bake at 350°F (175°C) for 35–40 minutes, tenting with foil if the top browns too quickly. - Top with icing and serve! • • • #recipe #baking #springrecipes #bakingideas #explore

Cheesy Garlic & Herb Plaits I love Danish pastry plaits. You know the sticky ones with maple & pecan? A little while ago I did a really quick 5 ingredient version of those and I've been dreaming about doing some with garlic and lots of herbs and cheese....so here they are. Garlicky toasted crumbs with Rosemary & Thyme, mixed with soft cheese and grated cheesy, so they're soft and oozy all wrapped up in golden puff pastry plaits. We had these for dinner with new potatoes and salad, but they would make a really nice lunch or if you make them half the size you could have them as part of a picky tea - like a really fancy veggie sausage roll! The full recipe for the first month is below x #bakingideas #easyrecipes #cakeideas #etonmess #passionfruit Ingredients: (For the cake) 415g unsalted butter, softened 415g caster sugar Zest 2 lemons 2 tsp lemon extract 6 large eggs 415g Cotswold Self Raising Flour 1 tsp baking powder (For the buttercream) 350g unsalted butter, softened 700g icing sugar, sifted 2 tbsp whole milk 1 tsp vanilla bean extract 8 mini meringue nests, crumbled (For the passionfruit curd) 5 passionfruits, hulled Juice 3 lemons 100ml water 160g caster sugar 20g cornflour (To decorate) 3 mini meringue nests 400g strawberries, hulled and sliced Mint leaves Icing sugar, to dust Method: 1. Preheat the oven to 160c fan and line the base of three 7 inch loose bottom cake tins with parchment paper. In a large bowl with an electric whisk or in the bowl of a stand mixer, add the butter, sugar, lemon zest and extract and beat for 10 minutes, until light and fluffy. Add the eggs one at a time and beat with each addition. 2. Once the eggs are incorporated, add the flour and baking powder and gently fold to combine. When nearly all of the flour is incorporated, add the milk and mix. Transfer the mixture evenly between the three tins and bake on the same shelf for 28 minutes. 3. Whilst baking, make the passion fruit curd. In a saucepan, add the passion fruit, lemon juice, sugar, water and cornflour and stir to combine. Place over a medium heat and whisk until thick and glossy. Leave to cool. 4. Make the buttercream. Beat the butter until pale and fluffy before adding the icing sugar. Begin to combine before adding the milk and vanilla extract. Whip until smooth before crumbling in the meringue nests. Stir to combine. Recipe continued in the comments x
