BECHAMEL | WHITE | CHEESE SAUCE RECIPE🍝 -here’s how you can make a delicious cheese sauce for your pasta❤️ -equal parts flour and butter First left the butter melt then add your flour and WHISK. -once you get a thick paste of flour and butter, add in your milk. -put in your milk bit by bit while whisking, the more the sauce gets thicker, you add more milk and whisk. -WHISK THOROUGHLY SO THERE ARE NO LUMPS. -add milk until your preferred thickness. -season with salt and pepper. -you can stop here if you’re making a bechamel or white sauce. -add cream cheese and grated cheese for a cheese sauce and whisk! -enjoyyyy❤️

Italian cheese sauce. This is a very easy recipe to make which is why I call it lazy cheese sauce. If you’re intimidated at the thought of making besciamella (Italian béchamel sauce) to make a cheese sauce then this is the recipe to get around it. It keeps the creaminess of a classic besciamella and with the addition of the cheese it gives it so much extra flavour. Today I added it to a classic Italian recipe of baked shells but it’s so versatile. You can also change up the cheeses to suit your taste. Your family will love it. Full recipe below. Recipe Yield Generously covered 40 shells. 1 1/2 cups cream 35% 3 formaggini 1 cup grated Parmigiano Reggiano 1 cup grated mozzarella Good pinch of salt optional pinch of nutmeg In a small sauce pan heat cream over medium. Fx rates in Nigeria however have taken up the cost of one bottle to about N7,000 and you usually need at least two for a family sized meal. Best Mozarella Cheese Recipe Ever @homechefattiya Like ❤️ =Appreciation+Motivation Follow @homechefattiya for more recipes Ingredients 1)2.25 litres fresh milk (not UHT) ,i used raw buffalo milk 2)1/2 cup white vinegar 3)1/2 teaspoon salt Method: 1)Heat 2.25 litres milk to 46–48°C (115–120°F). 2)Turn off the heat and add 1/2 cup vinegar. 3)Stir for 10 seconds, cover, and rest for 10–15 minutes. 4)Collect the curd and squeeze out excess whey. 5)Transfer the curd to a non-stick wok, add 1/2 teaspoon salt, and cook on medium heat. Stir continuously until the grainy texture disappears and the curd becomes smooth and stretchy. 6)Shape into a ball or block. 7)Let it sit at room temperature, then cover and refrigerate for 5–6 hours or overnight. 🧀 Yield:270g It may vary depending upon fat content of the milk being used. Mozzarella Cheese Recipe | Homemade Fresh Mozzarella Love stretchy cheese made at home? 🧀 Comment CHEESE if you want more homemade dairy recipes Save this post and follow @kanikacookingclass for detailed eggless cooking guides Ingredients Full-fat milk 2 litres (fresh, not UHT) Citric acid 2 tsp mixed in 1/4 cup water Liquid rennet 1/2 tsp mixed in 1/4 cup water Salt 1 to 1.5 tsp (to taste) Hot water as needed (60–70°C) Method Pour milk into a heavy pan. Heat slowly to 32°C on low flame, stirring gently. Add citric acid water. Stir for 10 seconds. Add diluted rennet. Stir gently for 10 seconds, stop stirring. Cover and rest 8–10 minutes till milk sets like jelly. Cut curd into squares using a knife. Heat again gently to 42°C. Stir very lightly for 1 minute. Switch off flame. Rest 5 minutes. Drain whey completely. Collect curds in a bowl. Pour hot water (60–70°C) over curds. Let sit 1 minute. Drain water. Add salt. Stretch and fold curds using spoon or hands until smooth, glossy, and stretchy. Shape into a ball. Dip in cold water to set shape. Tips Always use fresh full-fat milk. Do not boil milk at any stage. Stretch only when curds are hot. If cheese breaks, reheat with hot water and stretch again. Storage Store in airtight container with whey or lightly salted water. Keeps fresh 3–4 days refrigerated. Recipe⬇️ Mutton Mince- Add 1/2 chopped onion & garlic Add mince and sautee 1 tsp salt, 1 tsp cumin powder, 1 tsp chilli flakes 1 tbsp oyster sauce, 3 tbsp tomato paste 1/2 glass of water. Cover and cook until tender on low flame. Use any shape of paste you like. I used a store brought bechamel sauce. But u can make at home too. Recipe is below- 1 tbsp butter 1 cup milk 3 tbsp cream 1 chicken stock 1/2 tsp black pepper Salt as required Add 1 tbsp all purpose flour to little water to make a slurry Add to the mixture stirring continuously. U can add more all purpose flour if the mixture is thin. Assembling- Add bechamel sauce first. Then pasta, top it with sauce again. Add mince, layer of pasta, add sauce in every layer. And in the end add mozarella cheese. Cover with foil and bake at 180 degrees for 15 mins. Remove the foil and bake for 5-10 mins for the colour. Say cheeeeese! 🤭😁 It’s really easy to make this preservative free mozzarella cheese at home! Give it a try and let me know how it turned out ❤️ Heat 2 Litres Full Fat Milk. (Use Full fat Dairy Milk, Not the packaged ones or tetra pack) Heat it till it’s warm. Should not be very hot. Now switch off the flame. Add 7-8 Tbsp of Vinegar to this. 1 Tbsp at a time. Keep mixing throughout. Now remove the cheese and squeeze out all the water. In a bowl, Add very hot water with salt, And drop your cheese into this. Wait for 10 seconds, Pick it up and stretch and pull it. Repeat 3-4 times Next, Dip this in ice cold water for 5 minutes. That’s it. Mozzarella Cheese is ready! HOW TO MAKE “PARMESAN STYLE” CHEESE AT HOME (NO RENNET) Kanika’s Cooking Class If you love parmesan taste but don’t want rennet, try this veg method at home. Easy, high protein, and super tasty on pasta, pizza, salads, sandwiches. COMMENT “CHEESE” and I’ll share more veg cheese recipes. INGREDIENTS Milk full cream 2 litre White vinegar 4 to 6 tbsp (or lemon juice 5 to 7 tbsp) Salt 1 to 1.5 tsp (as per taste) Optional flavour for parmesan vibe Garlic powder 1 tsp Italian herbs 1 tsp Black pepper 1/2 tsp Nutritional yeast 2 to 3 tbsp (gives cheesy parmesan taste, optional) Olive oil 1 tsp (optional) TOOLS Heavy bottom pot Thermometer (optional) Muslin cloth Strainer Bowl Cheese mould or any small perforated box Weight for pressing (1 to 2 kg) METHOD Step 1 Heat the milk Pour milk in pot and heat on medium flame. Heat till it is hot and steamy but not boiling hard. Ideal temp 85°C to 90°C. Stir in between so milk doesn’t burn at bottom. Step 2 Curdle without rennet Switch off flame. Add vinegar 1 tbsp at a time and gently stir. In 1 to 2 minutes curds will separate from whey. If whey is still milky, add 1 more tbsp vinegar and wait 1 minute. Do not over stir. Step 3 Rest Cover and rest 10 minutes. Step 4 Strain Line strainer with muslin cloth. Pour mixture, collect whey in bowl. Rinse curds with cold water 15 to 20 seconds to remove vinegar taste. Squeeze gently to remove extra water. Step 5 Flavour (parmesan style) Transfer curds to a bowl. Add salt, garlic powder, herbs, pepper. Optional add nutritional yeast for strong parmesan taste. Mix well. Step 6 Press and set Put curds into mould lined with cloth. Fold cloth on top. Press with 1 to 2 kg weight for 2 to 4 hours. For firmer cheese press 6 to 8 hours in fridge. Step 7 Dry and age (quick home method) Unmould and pat dry. Air dry in fridge uncovered 12 to 24 hours (flip once). Now you can grate it. For deeper flavour, keep in fridge 3 to 7 days uncovered for 2 days, then wrap in butter paper and keep 5 days (flip daily). SERVING IDEAS Grate on pasta, pizza, garlic bread, soups Mix with breadcrumbs for cutlet coating Sprinkle on salad and roasted veggies STORAGE Grated cheese fridge 7 to 10 days Block form fridg

My classmates risked DETENTION for ME?! ✨Recipe: Ingredients: • 1 lb pasta of choice • 2 tbsp cornstarch • 3 tbsp butter • 3 tbsp flour • 1 can (12 oz) evaporated milk • 1 ½ cup heavy cream • ½ lb mozzarella • ½ lb velveeta • 6 oz gruyere • ½ lb sharp cheddar • ½ lb smoked gouda • ½ lb colby jack • 1 tsp salt • 1 tsp pepper • 1 tsp garlic powder • 1 tsp onion powder • 1 tsp cayenne pepper • 1 tsp smoked paprika • 1 tsp mustard powder Directions: 1. In a large sized bowl shred all the cheeses and coat with cornstarch. 2. Boil your noodles until slightly underdone and set aside. 3. In a large pan on medium low heat, melt the butter before whisking in the flour until combined. Add the spices and stir to combine. 4. Whisk in evaporated milk then heavy cream little bits at a time. If you pour it all at once it could break the sauce or curdle. 5. Small amounts at a time, whisk in half of your grated cheese. 6. Add your noodles into your bechamel sauce and combine well. 7. In a 9x13 baking dish, place half of the noodles/sauce, then half the remaining shredded cheese. Add the other half of the noodles/sauce and then the remaining cheese. 8. Bake at 350°F for 15-20 minutes, then broil for another 5 minutes. 9. Remove from the oven and let rest for about 5 more minutes, then serve and enjoy! 😊
