Beat eggs in a bowl. Mix in all the other ingredients. Spray lightly to avoid sticking. Pour a little bit in the middle, it will spread out. Don't overfill. Cook until golden brown. These were 10/10. I tested a reader’s idea… and it worked. You don’t even need the air fryer anymore. I turned my single-serve high protein bread into TWO waffles using a mini waffle maker and they were perfect. Crispy edges. Soft inside. Done in minutes. And here’s the best part… When I tested it with unflavored whey instead of egg white protein, the protein actually increased by 5 grams. For midlife women trying to protect muscle and keep fat moderate, that’s a win. Now -important: If you want a roll for sandwiches → use egg white protein in the air fryer. If you want quick and easy waffles → whey works beautifully. Two methods. Same simple batter. High protein either way. Cook until golden. For the topping I used skyr (or you can use greek yoghurt )and fresh strawberries 🍓 Then I stacked all 4 waffles together – simple, soft and delicious! There’s a story behind my sweet potato waffles. How they became one of my favorite foods — and how I started sharing them with you. It began after the birth of my youngest daughter. I was 40 years old. Before my pregnancy, I had lost over 60 pounds. Afterward, I felt defeated. My body didn’t “bounce back” like I thought it would, and I was left with extra weight I had worked so hard to lose. As an emotional eater, food was always on my mind. And during this season of my life, that didn’t change. But I didn’t want to feel bad about food. I wanted to enjoy what I was eating. To look forward to meals. To feel comfort and joy — without guilt. That’s when I discovered sweet potato waffles and fell in love. I started changing the recipe and made it my own. I used clean, whole foods that made my body feel good. For a while, it felt like my little secret. Then a gluten-free friend told me she was starting to dread breakfast. Everything tasted bland and boring. I knew I could help her. And that’s where The Waffle Story begins. Cooking time 5 to 7 minutes. 1 Avacado 2 Large Eggs 1 Lime Salt to taste Handful of Spinach 1/2 Bell pepper (big size) 5-6 Mushroom 1/4cup Extra sharp Cheddar Cheese 1Tpsn White Pepper 2Tbspn Potato Starch Avacado Oil for brushing Preparation time 7 to 8 minutes. Cooking time 5 to 7 minutes. Mash the avocado with a fork and then add two eggs one lime and salt as per taste. Make a smooth mixture and keep aside then take a handful of spinach and a half bell pepper , 5 to 6 mushrooms and chop it in a chopper and mix it with the previously smashed avocado mixture then add in 1/4 cup of extra sharp cheddar cheese, 1 teaspoon of white pepper, and 2 tablespoon of potato starch and folded in to make a smooth batter, then grease a waffle maker and pour in 1/3 cup batter in each waffle square. Cook it for 5 to 6 minutes and it’s ready to be served.
