This Thai Basil Fish is a perfect blend of simplicity and exotic flavors, and the best part? You can whip it up in under 15 minutes. Ingredients: - Fish🐟 - 200g boneless fish cubes - 1 tsp pepper - Salt to taste - Lemon juice 🍋 - 2 tbsp cornflour Instructions: Season the fish with salt, pepper, and lemon juice. Toss the fish in cornflour and deep fry for 1.5 to 2 minutes until golden. Sauce: - 2 tsp oil - 1 tbsp minced garlic - 1 onion, finely chopped - 1 tbsp chili or Sriracha sauce - 3/4 tsp soy sauce - 1 tsp honey - Fresh coriander leaves - Basil leaves - 1 tbsp peanuts Instructions: 1. Heat oil in a pan and sauté the garlic and onion until they start to brown. 2. Add the chili sauce, soy sauce, honey, and a pinch of salt. Sauté for 30 seconds. 3. Toss in the fried fish and fresh coriander leaves, sauté for another minute. 4. Finally, add the chopped basil and peanuts, then remove from heat. Pan fried basa fillets with sautéed green beans✨ The fish * 2 basa fillets * 1 cajun seasoning * 1 tsp garlic & herbs seasoning * 1 tsp veggie seasoning or salt * 2 tsp olive oil * 2 tsp butter * 1 tsp minced garlic Season the fish then heat oil and butter on a medium heat, add minced garlic sauté for a minute, then add fish and cook 2 minutes each side. Remove it from heat and set aside The green beans * 1 chopped onion * 1 tsp minced garlic * Trimmed green beans * Salt and pepper The same pan used to cook the fish add onion and garlic. It's here! The Crispy Skin Barramundi with Chunky Salsa Verde that you guys were begging us for! Easy to dial up or dial down pending on how many people you're serving over the Easter long weekend 🐟 Recipe 👇 Ingredients 4-6 @fishinthefamily barramundi fillets ¼ cup chopped flat-leaf parsley ¼ cup chopped coriander ½ bunch finely chopped chives 2 tbsp chopped dill 1 Tbsp chopped capers 1 garlic clove, finely grated ½ tbsp dried oregano Zest and juice of 1 lemon 1 tsp chilli flakes Salt and pepper ½ cup olive oil Method 1. Preheat oven to 180C and line a baking tray with baking paper. 2. Pat the fish fillets dry and make 2 insertions lengthways along the skin. 3. To make the Chunky Salsa Verde: Place the chopped parsley, coriander, chives,dill, capers, lemon zest and juice, dried oregano, garlic and chilli flakes. Season with a pinch of salt and pepper and add the olive oil. Mix well to combine. Set aside. 4. Bring a large frying pan to medium high heat. Drizzle with olive oil. Sear the fish on the skin side for 3-4 minutes, until golden and crispy. 5. Transfer to the prepared baking tray. Bake in the oven for 10-12 minutes, until cooked through. 6. Spoon some of the Chunky Salsa Verde on a platter and place the barramundi on top. Spoon some more Chunky Salsa Verde over the top and serve with lemon wedges. #goodfriday #easter #seafood #fish #barramundi #salsaverde

Save this for next time you’re craving fish for dinner (and thank me later). Ingredients - Black bass fillets - 1.5 sticks butter (1 stick + ½ stick, divided) - Olive oil - Neutral oil (for searing) - 2 anchovy fillets - 3 shallots, very finely chopped - Garlic, thinly sliced - Capers - Zest of 1 lemon + fresh lemon juice - Parsley, chopped - Chives, chopped - Salt Instructions 1. Start the sauce Heat olive oil over medium heat. Add anchovies and let them melt into the oil. Add garlic, then shallots. Cook until soft and slightly jammy — this step builds all the flavor. 2. Make the sauce Add 1 stick butter + capers. Let it melt and gently bubble. Stir in lemon zest and herbs. You should have a glossy, cohesive sauce. 3. Sear the bass Heat neutral oil in a separate pan until shimmering. Pat fish dry, season with salt, and place it in the pan. Don’t move it — that’s how you get a proper crust. Flip and cook until just under done. 4. Bring it together Transfer fish into the sauce. Add remaining ½ stick butter. Gently shake the pan until the sauce turns silky and coats the fish. 5. Finish Squeeze fresh lemon juice right at the end. Serve with rice and garlicky green beans. Green beans Blanch → ice bath → sauté with olive oil + sliced garlic. Enjoy!

Sea Bass with cherry tomatoes, olives and butter beans. A simple, speedy summer dinner. One of my favourite ways to eat Sea bass this time o f year. I used Isle of White tomatoes as they are now in season. Top tip: Make a double batch of the tomato and bean mixture, this is delicious served cold in a lunch box the next day. Serves 2 Ingredients: 1 small onion, finely sliced 2 cloves garlic, finely sliced 2 handfuls cherry tomatoes, halved 1 can butter beans, drained 10 black olives 1 tbsp white wine vinegar Small bunch parsley, finely chopped 1 lemon 2 x fillets sea bass Small knob of butter Method: Heat 1 tbsp olive oil in a large frying pan over a medium heat Add the onion and garlic with a pinch of salt. Give it a stir and cook for 3 minutes until the onion is soft Add the tomatoes, olives, beans and vinegar. Cover with a lid. Cook for 5 minutes until the tomatoes soften Meanwhile pat the skin of the sea bass dry with kitchen paper then gently score the skin several times with a sharp knife ( This helps it cook quickly and also stops it curling up ) Check the seasoning on the tomatoes then remove from the heat, cover to keep warm. Heat a new frying pan over a high heat with a splash of oil. Add the sea bass skin side down. Use your fingers or the back of a spatula to gently press the fish down for 30 seconds Cook for around 3 minutes until the skin is golden and crispy. Flip the fish then add the butter, when melted use a spoon to baste over the skin. Squeeze in the juice of 1/2 the lemon. Remove from the heat Divide the bean mixture between serving plates, add a fillet of sea bass to each. Scatter with parsley. Serve with a lemon wedge. #food #recipes #seabass

Quick & Delicious Mediterranean Fish Puttanesca 🧾 Ingredients (serves 4) 4 white fish fillets (cod, halibut, or sea bass) 2 tbsp olive oil 3 cloves garlic, minced 1 can (400g) crushed tomatoes ½ cup cherry tomatoes, halved ¼ cup Kalamata olives, sliced 2 tbsp Capers, drained ½ tsp red chili flakes (optional) 1 tsp dried oregano Salt and black pepper, to taste Fresh parsley or basil, chopped Lemon wedges, for serving 👩‍🍳 Instructions Season the fish Pat dry and season with salt and pepper. Build the sauce (10 minutes) Heat olive oil in a pan over medium heat. Add garlic and sauté briefly. Stir in crushed tomatoes, cherry tomatoes, olives, capers, chili flakes, and oregano. Simmer for 5–7 minutes. Cook the fish (8–10 minutes) Nestle the fish fillets into the sauce. Cover and cook gently until the fish is opaque and flakes easily. Finish & serve Taste and adjust seasoning. Sprinkle fresh herbs and serve with lemon wedges. 🍽️ Serving Ideas Over pasta, couscous, or crusty bread With a side of roasted vegetables or a simple salad 💡 Quick Tips Use canned diced tomatoes if you prefer more texture. Anchovies (optional) can be added for deeper umami flavor. Works great with shrimp or mixed seafood too.

Brushed with olive oil and seasoned with THE MODERN NONNA Seasoning mix from @konobagourmet . Topped with chopped green onions then baked at 425 degrees F for 10-12 minutes! Squeezed some fresh lemon juice on top and it was fantastic!👌 Some other great seasoning options to use on fish are ADRIATIC, ORIGINAL or MEDITERRANEAN from @konobahourmet. All so delicious!
