What are your honest thoughts on batched matcha? I visit a lot of cafes to understand their matcha programs. One of the biggest things I notice? Batching isn’t hurting the experience. Inconsistent batching is. Batched matcha is often stigmatized. Many drinkers equate it with low quality. I understand why batching feels controversial. I’ve spent over a decade in matcha and now create education for cafes through @matchaprogram, so I see both sides. When done poorly, it shows. When done well, it can be consistent, efficient, and delicious. I’ve ordered matcha that should have been beautiful, high quality powder, thoughtful menu, and it still falls flat because of a few operational gaps: 🚨 Lack of temperature control: Matcha is highly sensitive to light, heat, and oxygen. When batched matcha sits at room temperature, oxidation speeds up, dulling color and flattening flavor. ✅ Keep dispensing bottles in an ice bath during service and store back stock in the fridge or walk in. 🚨Inconsistent shots: Matcha naturally settles over time depending on grind and particle size. If you don’t reincorporate, each pour tastes different. ✅ Gently shake your dispensing bottle before each pour. 🚨 Lack of team confidence when speaking about matcha: Baristas can explain coffee origin and tasting notes, then hesitate when asked about matcha. Customers feel that shift immediately. ✅ Train your team on what you serve, how you serve it, and why. Competence builds confidence. Confidence builds trust. One question I ask to gauge a batching system: How many grams of matcha are in each shot? I’m always impressed when a barista can answer clearly. Most of the time I hear: ‘We use 30g per drink’ but that is the total shot, not the dose per serving. When I ask follow ups like 3g or 4g per shot, most don’t know. Great programs remove complexity. Guests should never have to calculate what they are drinking. These are small details. But they are the difference between a matcha that feels intentional and premium and one that feels inconsistent. #batchedmatcha #matcha #baristatraining #specialtycafe #cafeowner

Let me know if you want the RECIPES we used for this massive freezer meal prep We made: 4 huge lasagnas 4 taco pasta 4 chicken pot pie gnocchi 4 Tuscan chicken orzo 48 protein muffins 96 mini muffins + used leftovers from the lasagna to make dinner for that day! To heat the dinners we put them in the oven frozen at 350 for about an hour. Give em a stir to make sure they are hot. These could definitely be cheaper with some tweaks and price matching but usually each meal feeds my family of six and we usually have left overs since my kids are smaller. Episode 8 ✨BATCHING ON A BUDGET✨… This breakfast recipe is my yoghurt raspberry pancake traybake, which is an easy batch recipe, perfect for breakfast on the go. 😊 Quite a few of you have messaged asking specifically for breakfast recipes so over the next few weeks, I’ll be showing you some of my favourite breakfast recipes for when you need to meal plan & meal prep ahead of the week. This recipes makes 6 portions Takes 1 hour Ingredeints: 120g self raising flour 60g oats 5 TBsp golden caster sugar 150ml milk 200g natural yoghurt 1 Tsp vanilla extract 1 egg Handful of fresh raspberries (or other topping choice) To serve: Extra yoghurt Maple syrup Method: Preheat the oven to 200°C. Line a baking tray that is approximately 20 x 25 cm. In a mixing bowl, mix together the flour, oats & sugar. Then add the milk, yoghurt, egg and vanilla. Use a fork or a whisk to mix together (trust the process even if it’s lumpy at first). Only mix until smooth, don’t over mix after this. Rest the mixture for 15 minutes. Pour into the lined baking tray and pour in the mixture. Add raspberries and press them into the mixture. Sprinkle over another tablespoon of sugar. Bake for 10-15 mins until slightly golden. Remove from oven when the pancake is set but not rubbery. Let cool, cut into squares and place in Tupperware. Before taking a portion to work, add a big dollop of yoghurt & maple syrup.
