La bechamel no te queda bien… porque nadie te explica esto. Haces un roux (mantequilla + harina), lo cocinas bien y luego agregas leche caliente poco a poco (si no → grumos). Ahora, lo importante: el espesor depende del porcentaje de roux que uses. Te dejo la guía clara: • 10% roux → bechamel ligera (para salsas, pastas) Ej: 1L leche = 100g roux (50g mantequilla + 50g harina) • 15% roux → bechamel cremosa (perfecta para lasañas) Ej: 1L leche = 150g roux (75g mantequilla + 75g harina) • 20% roux → bechamel espesa (tipo rellenos, croquetas) Ej: 1L leche = 200g roux (100g mantequilla + 100g harina) Extra pro tip: Puedes tostar el roux antes → sabor más profundo. Y lo mejor: puedes llevar esta base a donde quieras… jamón serrano, tocino, quesos… y crear mil salsas diferentes. Guarda esto porque te va a salvar demasiadas recetas 🤝

Molho Bechamel / Molho Branco “Quando tiverdes elevado o Filho do Homem, então sabereis que eu sou, e que nada faço por mim mesmo, mas digo apenas aquilo que o Pai me ensinou.” (Jo 8,28) ⸻ Ingredientes: ✅ 1 litro de leite ✅ 50g de manteiga ✅ 50g de farinha de trigo Cebola piquê (para aromatizar): ✅ 1/2 cebola (roxa ou branca) ✅ 2 folhas de louro ✅ 2 cravos-da-índia ⸻ Modo de Preparo: 1️⃣ Espete os cravos-da-índia na meia cebola e junte com as folhas de louro para formar a cebola piquê. 2️⃣ Aqueça o leite junto com a cebola piquê até começar a levantar fervura. Desligue e reserve para infusionar o sabor. 3️⃣ Em outra panela, derreta a manteiga em fogo baixo. 4️⃣ Adicione a farinha e mexa bem por cerca de 2 minutos, formando um roux (essa base não deve dourar). 5️⃣ Retire a cebola piquê do leite e adicione o leite aos poucos na mistura, mexendo sempre para não empelotar. 6️⃣ Cozinhe até engrossar, ajustando o sal e, se quiser, finalize com noz-moscada. For the meat sauce: • 1.5 lb 80/20 ground beef • 2- 32oz jars of Marinara sauce from @raoshomemade Bechamel sauce: • 4 tbsp butter • 4 tbsp all purpose flour • 4 cups whole milk • Salt to taste • Garlic powder to taste • Black pepper to taste • 1/4 tsp Nutmeg • 1/4 cup Parmesan cheese Assembly: • 2 boxes of oven ready lasagna noodles @barillaus or your preferred brand. • 1 box (5oz) of Parmesan cheese • 1 bag (16oz) of shredded Mozzarella cheese Instructions: For the meat sauce, I like to keep it simple and use the marinara sauce from @raoshomemade, I love their sauces and it saves me so much time! But if you prefer to make your own sauce, that’s great too! 1. In a large bowl over medium-high heat, add the beef, breaking it apart with a wooden spoon, until it’s browned and cooked through. This usually takes about 5-7 minutes. 2. Pour the Rao’s marinara sauce into the pan with the beef. Stir and combine well. 3. Reduce the heat to low and let the sauce simmer for about 20-25 minutes, stirring occasionally. This allows flavors to meld together and the sauce to thicken. Bechamel sauce: 1. Melt in butter in a large pan over low heat, once the butter starts to foam, add the flour. Cook, mixing constantly, for about 3 minutes until no lumps remain. 2. While mixing, slowly pour in the milk until evenly incorporated. Add salt, pepper, garlic powder and nutmeg, mix well. Add Parmesan cheese and combine well. 3. Cook, mixing often, until the sauce has thickened enough to coat the back of a spoon (8-10 minutes) CONTINUE IN THE COMMENTS👇🏻

Welcome to the fifth and final episode of one pot one tray!! Going out with a bang with the ultimate comfort food - a one pot lasagne. Using a ricotta parmesan mix as the bechamel replacement to keep the cooking minimal and it works so well. Sloppy, juicy and cosy and comforting! Perfect for midweek! Ingredients: 500g beef mince 1 red onion 1 large carrot 2 sticks celery 150g chestnut mushrooms 4 garlic cloves 1 bay leaf 1 tbsp tomato paste 500ml passata 400ml chopped tomatoes 200ml beef or chicken stock 250g ricotta 100g parmesan 200-300g mozarella 6-8 lasagne sheets Fresh basil to garnish Method: Set the oven to 190C. Dice all the vegetables and mince the garlic. Fry the onion, celery and carrot in olive oil and salt for 3 minutes and then add the mushrooms and cook these out for 5-7 minutes. Add in the beef mince and break it up. Stir through the tomato paste. Cook the meat until the juices run clear and then add in the tomato passata, chopped tomatoes, stock and bay leaf. Stir and let this simmer for 10-15 minutes stirring regularly. Break up some of the lasagne sheets and stir these in, saving a few for the top. Mix together ricotta and grated parmesan and dollop in, gently swirling through the sauce. Finish with more broken lasagne sheets and then another few dollops of ricotta and torn up mozarella. Bake it in the oven for 25 -30 minutes and then serve with fresh basil!
