Most people walk into a butcher and just guess. Ribeye. Sirloin. Strip. Flank. They all look similar but they cook, taste, and fuel your body very differently. Hereโ€™s the simple rule: โ€ข More marbling = more flavour + more calories โ€ข Leaner cuts = easier fat loss + higher protein per calorie โ€ข The right cut depends on your goal โ€” not hype Ribeye for flavour. Strip for balance. Sirloin for consistency. Filet for tenderness. Flat iron if you know what youโ€™re doing. Stop eating random cuts and start eating with intention. Save this so next time you hit the butcher, you actually know what to ask for.

Who doesnโ€™t love saving money on steak?! I know the very popular favorites are New York strip steak and the ribeye so today I focused on how to make these cuts cheaper. Buying in bulk and cutting it yourself is the best option for this. We like to buy from our local co-op, but we also have done it at grocery stores and of course there is Costco. Look for what is called a primal cut. This is the entire section of the cow that the butchers would typically cut down into smaller steaks. You can save money by cutting them yourself! I saved somewhere between four and five dollars a pound by doing this! There are also other cuts of steak that are fabulously delicious that I will share in another real so stay tuned!! The end cut that I was talking about is cost-effective if youโ€™re just buying a couple of steaks for dinner one night. Let me know if you found this helpful and Iโ€™d love to hear tips on how you save money on meat!

COSTCO STEAK PREP! BIG BOY BITES ONLY Beef prices are way too high and donโ€™t seem to be dropping anytime soon. I have shopped at Publix my entire life, and it was always reasonably priced, but I went a few weeks ago, and an average-looking ribeye was $23.99 per pound. That should be wagyu pricing, not mid tier run of the mill steak. Costco steaks are significantly better priced, but paying $3-5 more per pound just to have them pre-sliced makes no sense. Shoutout to Costco for the best meat prices a normal person can buy, since every other grocery store is wildly expensive. I decided to take action into my own hands and buy a 14 lb. NY strip at $10 per pound and slice it myself. I got 12 separate 1 lb. steaks from this, each steak being ~1 lb and costing ~ $10. Start by cutting off the majority of the fat and all of the silverskin. You can keep some fat on the cap of the steak, but I like to remove about 85% of the fat, since there is about 1.5-2.5 lbs of fat on the steak. Do NOT throw away the fat, as you can render it down and turn it into beef tallow. This is the perfect substitute for cooking oil and is another useful and perfect way to save money. Youโ€™re welcome! This tallow is the perfect fat to sear the NY strips in, due to tallowโ€™s super high smoke point. I like to slice my steaks into 1/2-3/4 inch steaks. If you cut them too thin, they will overcook in the pan before you can get a good crust. If you want, you can measure with a ruler or your fingers and mark each steak with a knife cut. Then go back and slice each steak from there. Make sure to slice the steak with a smooth slicing motion and NOT sawing back and forth. The sharper and bigger a knife you have, the better your cuts will come out. If you have a vacuum sealer, seal each steak individually to preserve them best. If you donโ€™t, I highly recommend you buy one for $100 - theyโ€™re amazing. If not, just use Ziploc bags and suck out all the air. Weigh each steak, mark each weight, and cut on the bag w/tape, and enjoy! #marchmadness #steak #prep #costco #feedfeed @thefeedfeed

In this video, our head butcher, JW Teets, walks through the entire breakdown of a half beef โ€” from tongue to oxtail โ€” so you can see exactly what comes with it. This particular half has a hanging weight of 460 lbs and was cut using our butcherโ€™s choice setup as an example. All steaks are cut 1ยผโ€ thick, with filets cut at 1ยฝโ€. For this half, we cut all possible roasts, but thatโ€™s completely up to you. When you buy a half beef, every cut is customizable on your cut sheet. For example: โ€ข More roasts = fewer pounds of ground beef โ€ข Fewer roasts = more ground beef Not sure how to fill out a cut sheet? Weโ€™re always happy to walk you through it. All beef is vacuum sealed, labeled, and ready for your freezer.
