Beef & Vegetable Stew served over Rice Ingredients: For the Meat: * Beef: 1 lb (approx. 500g) beef stew meat or chuck roast, cut into bite-sized cubes * Seasoning: Salt, black pepper, and garlic powder * Oil:2 tbsp cooking oil For the Stew Base: * Onion: 1 medium white onion, finely diced * Garlic: 1 tbsp minced garlic * Tomato Paste: 2 tbsp * Spices: 1 tsp paprika, 1 tsp cumin powder, 1tsp coriander powder, salt & pepper to taste. * Red Cooking Wine: ½ cup Vegetables & Liquid: * Carrots: 2medium carrots, sliced into rounds * Potatoes: 2-3 medium potatoes, peeled and cubed * Liquid:1 cup water or beef broth * Garnish:Fresh chopped parsley Instructions: 1. Season the Beef: Place the cubed beef in a bowl. Generously season with salt, black pepper, and garlic powder. Toss well to coat the meat evenly. 2. Sear the Meat: Heat oil in a large wok or deep skillet over medium-high heat. Add the seasoned beef and sear until browned on all sides. Once browned, remove the beef from the pan and set aside (reserve the juices/oil in the pan). 3. Sauté Aromatics: In the same pan, add the diced onions. Sauté until translucent and slightly golden. Add the minced garlic and cook for another minute until fragrant. 4. Build the Sauce: Stir in the tomato paste and your spices. Cook for a minute to toast the spices. Pour in the red cooking wine to deglaze the pan, scraping up any browned bits from the bottom. Let it simmer for a minute to reduce slightly. 5. Add Vegetables & Beef: Add the sliced carrots and cubed potatoes to the sauce. Return the browned beef (and any accumulated juices) back into the pan. Stir everything together to coat the ingredients in the rich sauce. 6. Simmer: Pour in the water (or beef broth). Bring to a boil, then reduce heat to low. Cover and let it simmer for about 20–30 minutes, or until the potatoes and carrots are tender and the sauce has thickened. 7. Classic Beef Stew Ingredients 2 lbs Beef chuck roast (1-inch cubes) 3 tbsp Extra virgin olive oil 3 Large carrots (thick rounds) 3 Medium Yukon gold potatoes (peeled and diced) 1 Large yellow onion (diced) 3 Cloves garlic (minced) 4 cups Low-sodium beef broth 2 tbsp Tomato paste 2 tsp Worcestershire sauce 1/4 cup All-purpose flour 2 Bay leaves 4 sprigs Fresh thyme To taste Kosher salt and cracked black pepper Instructions Sear: Brown seasoned beef in olive oil in a Dutch oven (in batches). Remove and set aside. Sauté: Cook onions and carrots for 5 minutes. Add garlic for 30 seconds. Thicken & Deglaze: Stir in tomato paste and flour. Pour in 1 cup of broth, scraping the bottom of the pot. Simmer: Return beef to pot. Add remaining broth, Worcestershire, thyme, and bay leaves. Simmer covered for 1.5–2 hours. Potatoes: Stir in potatoes. Simmer covered for 45–60 more minutes until tender. Finish: Discard herbs. Season to taste and serve.

Add you meat , add a little bit of salt and pepper to bring in the flavors . Let is sear ! Cover and it will release some juices . All it to all evaporate before you begin. Next add oil, stir . Then add your onions until they melt down & are soft ! Add ginger stir let it cook for 2 mins . Add your tomatoes, tomato paste and salt to taste. Once it all comes together add a little bit beef stock and allow it cook low and slow for another 15/20 mins ! And your stew is ready ! Powder the beef stew cubes with the flour. 2. On medium heat, in a wide skillet pan, pour the olive oil and add the sliced onions and garlic cloves. Stir for 1 minute. 3. Classic Beef Stew TIPS ⬇️ I have been making a variation of beef stew for over a decade. Here’s what I learned 1. You can use Roma tomatoes, cherry tomatoes, grape tomatoes, beef steak tomatoes - it all boils down the same. So use what you have on hand! 2. You can use a Yukon potato, baby potatoes, multi colored potatoes. Sweet potatoes if you like. You don’t have to sweat the small details. 3. The holy trinity - onions, celery and carrots are a non negotiable must!!! 4. Always buy the whole chuck and cut it up yourself. Dont buy the pre cut stuff. Having a bit of fat on the chuck is important. So don’t get the chuck that has none. 5. You can use whatever you have - bell pepper, yucca root, zucchini, corn, green beans, etc. the timing of when you add specific vegetables is what matters. 6. Getting a good sear on your chuck is important. I always use @getgraza and @amsalt.co for this step. 7. To really deepen the flavor of the stew you can add 1 tbsp of FISH SAUCE. I know crazy, but IYKYK. 8. Once the stew is done, chop in so many herbs like parsley, cilantro, green onions, chives. It brings in such a freshness to the finished dish. 9. LAST TIP - always balance out the savory with a little sweet. My secret to amazing beef stew is a sprinkle of sugar. About 1 tbsp! You have to trust me with this. Beef chuck roast usually 2-3lbs Potatoes (Yukon or baby) 4 celery stalks, sliced 4 carrots, sliced 1 large onion, diced 4 tomatoes (Roma, beef steak, etc) 3 tbsp tomato paste 3 tbsp minced garlic 3 tbsp worchestershire sauce 3 tbsp soy sauce 3 bay leaves Beef broth to cover Salt and pepper to taste
