Stop boiling your beets 🛑 Do this instead For years I boiled my beets… until I realized how much easier, tastier, and healthier they are when roasted. No babysitting a pot on the stove. Just place them in the oven and let them do their thing. They peel effortlessly and the flavor is incredible. A beloved holiday salad passed down from my late mother-in-law and my husband’s sisters. There isn’t a holiday table without it. Ingredients • 4 beets, scrubbed clean • ½ red onion, finely diced • 1 bunch parsley, chopped • 2 garlic cloves, minced • ¼ cup olive oil • ⅓ cup white distilled vinegar • Juice of 1 large lemon • 2 tsp salt • 1 tsp black pepper You will also need: foil and parchment paper Instructions 1. Wash the beets well, scrubbing the skins since they can be quite dirty even though we remove the peel later. 2. Lay a sheet of foil on a baking tray and place a sheet of parchment paper on top. (This keeps the foil from touching the beets.) 3. Place the beets on the tray and roast in a 400°F oven for about 1 hour, sometimes up to 1½ hours, until a knife slides in easily. 4. Let them cool slightly, then peel using your hands, a knife, or even under running water. The skins come right off. 5. Slice or chop the beets however you like and place them in a bowl. 6. Add the diced red onion and chopped parsley. 7. Add the minced garlic, olive oil, vinegar, lemon juice, salt, and black pepper. 8. Toss gently and taste for seasoning. Roasted Beets with Garlic Dill Greek Yogurt 🫶✨ INGREDIENTS: • 2 medium beets • 1 cup plain Greek yogurt @libertecanada • 3 garlic cloves, minced • 1–2 tbsp fresh dill • 1–2 tbsp olive oil @iliada_olive_oil • salt @wholefoodscanada • black pepper • Juice of lemon INSTRUCTIONS: 1. Preheat oven to 400°F (200°C). 2. Wash the beets. Wrap them tightly in parchment paper, then wrap again in foil. 3. Bake for 1 hour 15 minutes, or until fork tender. Let cool slightly, then peel and cube. 4. In a bowl, mix Greek yogurt, minced garlic, lemon juice, salt, pepper, and chopped dill. Adjust seasoning to taste. 5. Spread the yogurt mixture onto a serving plate. 6. Top with cubed roasted beets. 7. Drizzle with olive oil and sprinkle extra fresh dill on top. Preheat oven to 400 F; 2. Wash and trim beets; wrap in parchment paper; place on a baking sheet and roast for about an hour or until tender; 3. To make whipped feta- add all ingredients above to a food processor and give it a blitz; 4. Once beets have roasted, let them cool and peel; 5. Beets don’t get the love they deserve 😤😤 𝘿𝙚𝙩𝙖𝙞𝙡𝙨: (juice) - 2 beets - 3 medium sized carrots - 1 apple - 1/2 lemon - 1 cup water 𝘿𝙞𝙧𝙚𝙘𝙩𝙞𝙤𝙣𝙨: 1. Wash and chop produce 2. Blend all of the ingredients for 60-90 seconds 3. Pour into a fine mesh strainer/nut milk bag and squeeze out the pulp * Good for up to 3 days, but you can freeze the liquid to preserve nutrients 𝘿𝙚𝙩𝙖𝙞𝙡𝙨: (beetroot hummus) - 1 can chickpeas - 1 medium beet - 1/4 cup tahini - Juice of 1/2 lemon + zest - 1 tsp garlic powder (or 3 cloves of garlic) - 1/4 tsp cumin - 1/2 tsp salt 𝙏𝙤𝙥𝙥𝙚𝙙 𝙬𝙞𝙩𝙝: - Dried parsley - Olive oil 𝘿𝙞𝙧𝙚𝙘𝙩𝙞𝙤𝙣𝙨: 1.
