How I made biltong! This is a very delicious way to preserve meat.. You can get more elaborate and build an actual Biltong box that is more climate control controlled, but with a couple tricks, my wood stove heated house works just fine …. The trick being that if it gets a hard shell on the right side and it’s still moist on the inside, you can put it back in the fridge for a day, pull it out, and hang it again and it will help draw some of that internal moisture out. That said, having the soft center is quite nice, and because the stuff gets eaten so fast around here I’ve never had it spoil ha.
