A recipe you’ll come back to time and time again — especially as we head into the colder months. 🍷🥩 Full recipe below ⬇️ Recipe, Ingredients • 2 lbs beef chuck, diced • 1 lb double-smoked bacon, chopped into lardons • 2 onions, julienned • 2–3 carrots, sliced • 2 tbsp tomato paste • 2 cups red wine • 3 cups beef stock • 2 sprigs rosemary • 3 sprigs thyme • 2 bay leaves • 1½ cups mushrooms, chopped • 1 cup pearl onions, blanched & peeled • Salt & black pepper, to taste • Oil, as needed Method 1. Season beef with salt and pepper. Sear until browned, then remove. 2. Render bacon until crisp. Remove, keeping the fat. 3. Sauté onions and carrots in same pot. Add tomato paste and cook briefly. 4. Deglaze with red wine, then add beef stock. Return beef and bacon. Add rosemary, thyme, and bay leaves. Simmer. 5. Separately roast mushrooms and pearl onions in oil, salt, and pepper. Add them halfway through braise (about 1.5–2 hours). 6. Continue cooking until beef is tender and sauce is rich. Serve hot — ideally over mashed potatoes #easyrecipes #braisedbeef #torontochef

Enjoy! serves 4 3-4 tbsp olive oil 750g / 1.65 lb beef brisket joint 2 celery stick, diced 1/2 white onion, diced 1 large carrot, diced 2 tbsp tomato paste @muttipomodorouk 1/4 tsp cumin 1/2 tsp salt 1/2 tsp black pepper 300ml / 1 1/4 cups red wine 500ml / 2 cups beef bone broth/ stock @frejafoods 4 sprigs fresh thyme 2 tbsp salted butter - 1 kg / 6 cups potatoes (weigh when peeled + raw) 80g / 1/3 cup salted butter 160ml / 2/3 cup double/ heavy cream 1/2 tsp salt - Handful chives, chopped In a big pot on medium-high heat, add olive oil and your beef chunks (about 2 inch sized chunks). Brown on each side and then remove from the pan and leave to the side. Add celery, onion, carrot and mix for a few minutes. Add garlic, tomato paste, cumin, salt and pepper. Return the beef and cover with red wine, beef bone broth/ stock and some fresh thyme. Reduce the heat to a simmer and leave for 4 hours. When you are getting close to the beef being ready get a pig pot of water on to boil and add your peeled and quarter potatoes. Boil for around 15-20 minutes, until a knife goes through the centre easily. Drain and mash. Add butter, double cream and salt. Mix. When the beef is ready, take the beef out and strain the liquid into a pan. Simmer on a medium heat until thickened (this may take 10-15 minutes). Once the sauce is getting thicker, add the butter and mix. Re-add the beef and coat in the sauce. Add some mashed potato to your plate followed by beef, some sauce and then chopped chives. Braised Flanken-Style Short Ribs with Mini Potatoes & String Beans Ingredients 2 thick-cut flanken short ribs (about 2 inches thick, well-marbled) 3 tbsp tomato paste 8 shallots, halved 1 garlic bulb, halved 2 cups dry white wine (enough to submerge halfway up the meat) 2 cups mini potatoes A handful of string beans 1 tbsp ras el hanout 1 tbsp chicken consommé powder 1 tbsp onion consommé powder ½ tbsp hot paprika 1 tbsp sweet paprika 1 tsp cinnamon Salt, to taste Drizzle of date syrup Neutral oil for searing Method Preheat the oven to 275°F (135°C). Pat the short ribs dry and season with salt. Heat oil in a heavy ovenproof braising pan over medium-high heat and brown the ribs deeply on all sides. Remove the ribs and add the shallots and mini potatoes to the pan. Let them brown in the fat. Return the ribs to the pan. Add all spices, consommé powders, and tomato paste, stirring to coat well. Pour in the white wine, scraping up any browned bits. Add the halved garlic and string beans, then drizzle with a touch of date syrup. Cover the surface with parchment paper (a cartouche), seal with a tight-fitting lid, and transfer to the oven. Braise for 3 to 3½ hours, until the ribs are fall-off-the-bone tender. Spoon the braising liquid over the ribs and serve with the potatoes and string beans. Fun fact: this is the very first meal I made Tyler years ago in his Chicago apartment and it continues to be his favorite. Here’s what you’ll need: 
+ short ribs (hack: you can use cut up chuck roast if you’re on a budget - some restaurants do this)
+ 3 tbsp neutral oil + a pat of butter + 1 onion + 3 sticks celery + 2 carrots + garlic bulb cut in half + 2 tbsp tomato paste + half bottle of red wine + 3 cups beef broth + 1 tspn Worcestershire + 1 tbsp garlic powder + 3 bay leaves + a few sprigs of both thyme and rosemary + chives for garnish (optional) + I typically throw in 2 cups of mushrooms as well but didn’t have any on hand 
 + Sprinkle beef all over with s+p to taste, then coat with a thin layer of flour.
 + Heat oil in a large pot and brown on all sides.
 + Take beef out and add butter onion, celery, and carrots the same pot. Season with salt and cook for 2 minutes. + Add tomato paste and cook for 1 minute. + Add the beef back in, and add the worcestershire, wine, broth, thyme, rosemary, garlic powder, and bay leaves. + Cover with lid and simmer on low for 3 hours. If using an oven, do 325° for 3.5 hours with lid on.
 + Strain all liquid in the pot, pressing juices out of the onion, carrot etc. Return sauce into pot, bring to simmer and stir/reduce until thickened. **If it’s not thickening quickly enough, take 2 cups of the sauce out into a separate bowl and whisk in 2 teaspoons of flour until it’s smooth. Then add in the mixture slowly to the saucepot until it’s your desired consistency.**
 + Place beef on serving plate, spoon over sauce. Serve with any veggie or starch and enjoy! #braisedshortribs #braisedbeef
