The gut-loving bread you’ll bake on repeat 🍞✨ This Icelandic Rye Bread is nutrient-dense, slow-digesting and beautifully easy on the gut. Made with organic stone-ground rye and kefir, it’s naturally high in fibre to support digestion and help stabilise blood sugar, while kefir adds beneficial probiotics for gut and immune health. Earthy, moist and deeply satisfying — perfect for both sweet and savoury toppings. ICELANDIC RYE BREAD Ingredients 475 g organic stone-ground rye flour 2 teaspoons flaked sea salt 1 tablespoon baking powder 1 level teaspoon bicarb soda 500 ml kefir or plain yoghurt 125 ml raw honey 125 ml filtered water To serve (optional): Cream cheese Smoked salmon Almond butter Smashed avocado Method Preheat oven to 160°C (325°F) fan-forced. Combine rye flour, salt, baking powder and bicarb in a large bowl. In a separate bowl, mix kefir, honey and water. Pour into dry ingredients. Stir to form a soft, sticky batter. Pour into a large bread pan lined with baking paper. Loosely cover with baking paper, then foil. Bake for 1½–2 hours. Remove foil and paper, then remove from oven. Cool completely before slicing. Sourdough’ bread… with just 2 ingredients 👀 (And yes — I know, it’s not traditional sourdough… but hear me out.) If you love the idea of sourdough but not the starter, feeding, waiting and guessing… this is the shortcut. Just flour + kefir. No yeast. No additives. No proving. And you still get the benefits of a fermented food, thanks to the kefir. Ingredients • 400g organic self-raising flour • 280ml kefir • Optional: pinch of salt for flavour Method 1️⃣ Mix the flour and kefir (add salt if using) until a dough forms 2️⃣ Shape, score the top and place into a preheated ovenproof pot (lid on) 3️⃣ Bake at 200°C (180°C fan) for 30 minutes 4️⃣ Remove the lid and bake for a further 15 minutes until golden and crusty 👉 No proving needed — we’re not using yeast Why this is such a good swap • Kefir is a fermented food, supporting gut health • No preservatives or ultra-processed extras • Much gentler everyday bread option for families • Simple enough to actually make again Sometimes small changes like this make the biggest difference — especially when you’re feeding a family and want better, not perfect. 👉 Save this if you want an easy real-food bread 👉 Comment if you’d like more simple swaps & easy like this #RealFoodBread #KefirBread #LowUPF #FamilyWellbeing #SimpleBaking

🍞🍀 IRISH SODA BREAD — HOMEMADE BREAD IN 1 HOUR! ✨ This isn't just bread... it's the quickest and easiest homemade bread you can imagine! ✨ No yeast, no lengthy kneading, no waiting. Just 4 ingredients, 5 minutes of prep — and in one hour you have aromatic bread with a golden crispy crust and tender crumb. The perfect companion for soup or simply with butter! Ingredients: 450 g (~3.5 cups) All-Purpose Flour (or 400 g white + 50 g whole wheat for texture) 1 tsp Baking Soda 1 tsp Salt 400 ml (~1.7 cups) Kefir/Buttermilk (room temperature) Instructions: 1️⃣ Dry ingredients: In a large bowl, mix flour, baking soda, and salt. 2️⃣ Add kefir: Make a well in the center and pour in room temperature kefir/buttermilk. 3️⃣ Mix quickly: Quickly and gently mix with a spoon or hand. Don't knead for long! Just until ingredients are combined. Dough will be sticky — that's normal. 4️⃣ Shape: Transfer dough to a floured parchment-lined baking sheet. Lightly dust with flour and shape into a round, slightly flattened loaf (∅ 15-18 cm / 6-7 inches). 5️⃣ Cross cut: With a sharp knife, make a deep cross cut on top (almost to the middle) — this ensures even baking. 6️⃣ Bake: Bake at 200°C (400°F) for 40-50 minutes until golden-brown. Bread is ready when it sounds hollow when tapped on the bottom. 7️⃣ Cool: Transfer to a wire rack and cover with a clean towel — keeps the crust soft. IMPORTANT: Don't over-mix — the key to tender crumb! Kefir/buttermilk should be room temperature. Deep cross cut — for even baking.
