Basic Breads Ep 6 - Fruit, Nut & Seed Loaf 260ml Lukewarm water 7g instant yeast Squeeze of honey (approx 1 tbs) 350g Strong Flours As long as it’s 350g you can use a mix of what you want. If you do 100% wholemeal add 10ml more water I used a mix of @carrs_flour malty grain & strong wholemeal flour 1/2 tbs salt 100g mixed nuts and seeds (smash big nuts) 100-150g mixed dried fruit (I like to put 150g) This recipe is so versatile and you can work with ingredients you have at home or that are preferred to you. Whisk the yeast and water together, add honey and whisk again. Add flour and salt and mix until combined. Cover for 30min. After 30 min add half the fruit and half the nuts / seeds mix and do 4 stretch and folds pushing into the fruit to incorporate it into the dough. Cover and rest for 30 min: After 30 min the rest of the fruit, nut and seeds repeat the stretch and folding in the same way. Cover and place in the fridge for 10-24 hours. Once you’re ready to bake the loaf grease your tin with butter, flour the top of the dough and the work surface and turn the dough out. Stretch it slightly and roll it up as shown in the video, sealing it up and pushing in any bumps. Place it seam side down and cover for 45 min. 30 min before it’s ready to bake preheat your oven to 220C. Put a little dish with water in the bottom (like another loaf tin) Score the top with a razor or knife and bake for 10 min at 220C after 10 min take out the water and turn the oven down to 190C bake for another 25 min. ‼️ if you want the loaf softer keep the steam in there for longer or even for the full cooking time but don’t forget to turn the oven down Enjoy 🫶 Note: this will be a moist loaf and more dense then a regular white loaf but it’s absolutely delicious and perfect buttered with a slice of cheddar #bread #fibrefebruary #wholemealbread #wholemeal

Nut and Seed Bread (AKA Nordic Bread)! If you’re looking for a high-protein bread, look no further! With 5 different seeds, this recipe is high in fiber, protein, and healthy fats! The perfect combo for satiety 🍞 Recipe (makes 1 loaf): 1 cup oats 1 cup flaxmeal 2 tbsp chia seeds 2 tbsp psyllium powder 2 cups mixed nuts/seeds (I used pumpkin, sunflower, and sesame) 1 tsp salt 2 tbsp maple syrup 3 tbsp olive oil 1 tsp cinnamon 1.5 cups water 1) Mix everything and rest batter for 2 hours 2) Fill batter into loaf pan and press it down 3) Bake at 350 F for 30 minutes covered with foil 4) Remove foil and bake for another 30 minutes 5) Let cool completely before slicing. Pistachio & Walnut Date Bread Recipe adapted from @kingarthurbaking/King Arthur Baking Company 2 c chopped dates 4 tbsp softened butter 1 tsp baking soda 3/4 tsp salt 2/3 c brown sugar 1 c brewed coffee, hot 1 egg, beaten 1 tsp vanilla extract 1/2 tsp baking powder 1 3/4 c flour 1/2 c coarsely chopped pecans 1/2 c coarsely chopped pistachios Preheat oven to 350 degrees F. Grease a loaf pan. Place the dates, butter, baking soda, salt, and brown sugar in a large bowl. Pour the hot coffee into the bowl, stirring to combine. Allow the mixture to cool for 15 minutes. Add the egg, vanilla, baking powder, and flour, folding gently until combined. Stir in the nuts. Pour the batter into the pan. Smooth. Bake bread for 45 to 60 minutes. Remove from the oven; a cake tester or toothpick inserted into the center should come out clean. After 10 minutes, gently turn the bread out of the pan onto a rack to cool. Cool completely before slicing. #nationaldatenutbreadday #recipe #bread

This is a twist of all the life-changing breads out there. This one is a grain free version, for anyone who doesn’t get on with oats or wants to make a loaf that is just made 100%from nuts and seeds. It can also be made nut free by replacing the nuts with more seeds. The psyllium husk flakes are quite integral to the recipe as they are the healthy fibre that holds the loaf together. (Link in my bio under Amazon if you need it). For those of you on restricted diets this loaf is also: 🎯gluten-free 🎯wheat- free 🎯grain- free 🎯vegan 🎯oat free 🎯 dairy free 🎯egg free AND has: 🎯8.5 plant points 🎯 7g fibre per slice 🎯7g protein per slice 🎯 around 190 kcals per slice It is insanely delicious, holds together really well, freezes wells. Honestly, I think you are going to love this as much as all my other breads. Ingredients - makes 18 slices 150g whole flaxseeds 50g chia seeds 30ml olive oil 100g pumpkin seeds 100g sunflower seeds 75g sesame seeds 75g pistachio nuts/ hazelnuts / chopped almonds (choose one) 50g dried cranberries or currants (choose one) 35g psyllium husk flakes 1 teaspoon sea salt 300ml water To bake: 1 x 2lb loaf tin Loaf tin parchment liners Method Add all the ingredients to a large bowl and stir thoroughly to incorporate the water. The mixture should be quite stiff. Transfer to a lined 2lb loaf tin and flatten the surface using the back of a wet spoon. Sprinkle over extra seeds if desired. Leave to sit for 30–60 minutes to allow the mixture to firm up and bind. Preheat the oven to 185°C Fan. Bake the loaf for 60 minutes, or until golden and firm to the touch. Allow to cool completely in the tin before slicing.

Stell dir vor: ein nussiges, saftiges Walnussbrot mit knuspriger Kruste und das Ganze mit nur 4 Zutaten, die jeder zu Hause hat! Einfach, gelingsicher und unglaublich lecker. Dieses Brot schmeckt besser als vom Bäcker und bringt den Duft von frisch gebackenem Brot direkt in deine Küche. Hast du schon mal Walnussbrot selbst gebacken? Und womit belegst du es am liebsten? Zutaten: 480-490 g Wasser 10 g frische Hefe 680 g Dinkelmehl Typ 630 oder Weizenmehl Typ 550 100 g Vollkorn-Roggenmehl 100 g Walnüsse 17 g Salz Zubereitung: Hefe im Wasser auflösen. Mehl und Salz hinzufügen und 2–3 Minuten verkneten. Walnüsse dazugeben und nochmals ca. 1 Minute kneten. Den Teig abgedeckt ca. 60–90 Minuten (je nach Raumtemperatur) ruhen lassen. Auf eine bemehlte Fläche geben, zu einem Laib formen und in den gefetteten und bemehlten Ofenmeister legen. Deckel schließen und in den kalten Backofen stellen. Bei 235 °C Ober-/Unterhitze ca. 65 Minuten backen.
