Garlic Butter Cheese Bagels (Makes 6) Ingredients Bagel Dough • Bread flour – 300g • Sugar – 20g • Salt – 5g • Dry yeast – 4g • Warm water (30–40°C) – 170ml Garlic Butter • Unsalted butter – 100g • Garlic – 2–3 cloves • Salt – a pinch • Fresh parsley – 1 tbsp Filling •cheese Instructions 1. In a small bowl, mix the dry yeast with the warm water and let it sit for a few minutes. 2. In a large bowl, combine the bread flour, sugar, and salt. Add the yeast mixture and mix until a dough forms. 3. Knead the dough for about 5 minutes until smooth. 4. Cover and let the dough rise at around 30°C for 20 minutes. 5. Meanwhile, make the garlic butter by mixing softened butter, garlic, salt, and chopped parsley. Chill slightly so it firms up. 6. Punch down the dough and divide it into 6 pieces. Cover and let them rest for 15 minutes. 7. Roll each piece into a rope about 20 cm long. Place some garlic butter and cheese in the center, wrap the dough around it, and shape into a bagel ring. Seal well so the cheese doesn’t leak. 8. Let the shaped bagels rise again at 30°C for 20 minutes. 9. Bring 1 liter of water with 1 tablespoon of sugar to a gentle boil. Boil each bagel for about 30 seconds on each side. 10. Place the bagels on a lined baking tray. 11. Bake in a preheated oven at 230°C (450°F) for about 10 minutes, then reduce the temperature to 210°C (410°F) and bake for another 5–7 minutes until golden. 12. It is full of all sorts of preservatives that are so bad for you. So I decided I was going to teach myself how to make my own bread.After many attempts and failures I am so excited to share this recipe with you. It’s foolproof and easy to do. Recipe below and on my website www.miciamammas.com Homemade Bread Ingredients (serves 6 to 8) 3 Cups 00 Flour 1 ½ tsp. Salt 1 Packet of Rapid Rise Instant Yeast 1 ½ Cups of Lukewarm Water 1 tbsp. Olive Oil Method In a bowl add in the flour, salt, instant yeast and combine. Add in the lukewarm water and olive oil and stir with a fork until the dough is formed. It should be sticky but not too wet. If it is too wet, sprinkle in a little bit of flour and mix. Cover with a cloth and put in a dark dry place for two hours. Then sprinkle some flour on a large piece of parchment. Fold the dough into a ball and cover for another thirty minutes. In the meantime, preheat the oven to 450 degrees. Put the dutch oven into the oven to warm it up. Place the bread in the dutch oven. Using a knife, score the bread, cover and bake for 30 minutes. Uncover and bake for another 15 minutes. Yeast Activation In a bowl, combine warm water, sugar, and active dry yeast. Stir gently and allow it to rest for 10-15 minutes until fully foamy. This confirms proper yeast activation. 2. Dough Development In a stand mixer bowl, combine flour and salt. Add the activated yeast mixture and melted butter. Mix on low speed for 1 minute, then increase to medium-high speed and knead for 6-8 minutes until a smooth, elastic dough forms. 3. Bulk Fermentation Transfer dough to a lightly oiled bowl, cover, and rest in a warm environment for 30-40 minutes, or until doubled in volume. 4. Scaling and Shaping Divide dough evenly into two portions. Shape each into a rectangle, then roll tightly into loaf form. Place into greased loaf pans. 5. Mini ciabatta Recipe ANYONE can make this This is obviously hands on time. Remember you don’t have to stand and watch the dough while it’s resting or cooking 🫶 420ml Lukewarm Water (38-40°C) 7g instant yeast 500 Bread or AP flour (min 12% Protien) 10g Salt Drizzle olive oil. Whisk water & yeast together. Add flour and salt and mix well till it’s all combined (no flour lumps) drizzle with olive oil cover and rest 20 min. After 20 min wet your hand reach round and grab the dough. Lift it high as you can without breaking and fold it down. Do this 4 times turning the bowl after each fold and wetting your hand where necessary. Flip the dough over and fold it half. Cover and rest 20 min. After 20 min repeat the stretch and fold and flipping and folding the dough or do 4 x coil folds as I did. Cover and rest 1 hour. Put a shallow baking dish with water in the bottom of your oven (to create steam) Preheat oven to 220C with water inside. Line a big baking tray or 2 with parchment paper and brush some olive oil on the bottom. Flour top of dough and the work surface really well. Turn the dough out. Be patient it will come out. Flour the top and really gently from underneath stretch into a rectangle trying not to loose the air that’s built up in the dough. Cut into 18-20 pieces. Place on your tray cover and rest for 15min. Bake for 8 min then take the water out. Bake for another 6-10 min. Keeping an eye on it and turning down the oven if it’s getting too dark. to freeze wait until completely cool slice open and put in freezer bag. Tangzhong: 1/4 cup water 1/4 cup milk 2 tbsp bread flour Yeast mixture: 2/3 cup whole milk (warm) 1 tbsp active dry yeast 1 tsp sugar Dough: Yeast mixture 1 large egg 1/3 cup sugar 3 tbsp non-fat milk powder Tangzhong (cooled) 377g bread flour (around 3 cups) 1 tsp salt 4 tbsp unsalted butter (softened) Egg wash: 1 large egg 1 tbsp heavy cream Knead time/speed: 4-6 for 25 mins (15 mins before adding in butter, then 10 mins with butter incorporation) First rise: 1.5 hours Second rise: 1 hour Bake time/temp: 25-30 mins at 360 degrees Fahrenheit.
