How to cook a pretty epic Beef tongue With caper and horseradish dressing I sliced some of this and fried them as little steaks with burnt butter, For this recipe I just thinly slice the tongue, season and then spoon over the horseradish dressing. It was absolutely stunning! Horseradish dressing 2 tbsp sour cream 2 tbsp horseradish 2 tbsp olive oil 1 tbsp capers Half a lemon( zest and juice) 1 tsp grain mustard 1 pinch cayenne 1 tbsp chopped parsley and shallot S&P Brine 2lt water 250g salt (@olssonssalt) 30g brown sugar A pinch of: Orange peel, peppercorns, cloves, juniper bay leaves, coriander, fennel seeds 2lt water 250g salt (@olssonssalt) 30g brown sugar A pinch of: Orange peel, peppercorns, cloves, juniper bay leaves, coriander, fennel seeds 1 x grass fed beef tongue Brine the tongue for 24 - 36 hours. Remove from brine then poach for 2 - 3 hours in water with a chopped onion, garlic clove and a splash of apple vinegar. Once cooked remove the skin ( you’re not sure it’s done just pop in a skewer, it’ll have little resistance) Cool in some of the cooking liquid until needed. Pickle Juice Brined Steak Brining chicken in pickle juice is a common element in great fried chicken recipes. Like any wet brine, the high salt content helps it stay juicy, and the flavors complement each other perfectly (fried chicken + pickles = 👍). I wanted to see if the magical pickle juice brine could have the same effect on steak. The brine had a noticeable impact on texture prior to cooking, denaturing the protein for what would become a more tender and juicy steak. But there were two problems. Moisture is enemy number 1 when it comes to developing a good crust. Soaking a steak in liquid prior to cooking is a big no-no (It’s why dry brining is always preferred). But there’s a bigger problem. One thing you never see on a plate together is a pickle and a steak… and for good reason. The flavor was by no means terrible, but this was a good reminder that just because two things are great separately, it doesn’t mean they are great together. Corned beef has become a favorite dish for St. Patrick’s day, but it has an interesting history both in Ireland and the United States. The term “corned beef” refers to the way the beef (brisket) is preserved in large crystal salt that looks like corn kernels. It has nothing to do with corn itself. Corned beef became popular in the United States at the turn of the 20th century when Irish immigrants who lived near eastern European Jews, had their beef preserved by Jewish butchers using kosher salt and methods. Meanwhile, in Ireland pigs were more popular because of the higher cost of beef. I’ve always loved corned beef, but until this year I had never made it. It requires a lot of pickling spices, curing salt, and a good brine for 5-7 days before the brisket braises for at least 4 hours. I was thrilled with the result, and made my first home-made corned beef sandwich with rye bread, mustard, cabbage, and pickles. I used a recipe from the internet (they’re mostly all the same), and ordered the curing salt from Amazon. I’ll definitely be making corned beef again soon!
