Smoked a 31.6 pound Brisket. Didn’t even know briskets got this big. My usual process. Fired up my Woodridge Pro to 225° for the first 6 hours on Super Smoke. Then next 6 hours at 250°. After the 12 hour mark, the internal temperature of the flat was at 173° with the @meatermade in the center of the flat. As always, I put the brisket in a foil pan with a couple cups of beef broth and about a cup of the rendered beef tallow. I bump the @traegergrills to 275° to finish it off with the brisket fully covered with foil. Probe tender was 201°. Rested for 2 hours before slicing. The width of the brisket was over 14 inches long. This brisket came out pretty awesome. I wish I had a little bit more bark on the brisket, but all in all, this was a good one. Smoked another beautiful brisket on my @traegergrills With that said, I wanted to highlight in this video how I prefer to slice my briskets when i have company or doing it for a crowd. Like any protein, you always want to slice against the grain of the meat to ensure the most tender by possible. When it comes to brisket, I like to start at the front of the flat and work my way through it having quarter inch thick slices. Once I get to the point of the brisket, I like the cube those up to about 1 inch. The best bite in barbecue is considered to be a brisket burnt end, so make sure you give those out to your favorite people. . . . . . #kendrickbbq #traegergrills #brisket #smokedbrisket #bbqbrisket

I just got this Boning Knife from @montanaknifecompany and I wanted to put it to good use… I couldn’t think of a better way to do that, than with a brisket trim. Trimming a brisket is so therapeutic and I really enjoy the process. Give it the time and attention it deserves and you’re setting your entire cook up for success ! I have so many friends and family that ask how to make their brisket better or what I do with my brisket that makes it special… And honestly, just give it the attention it deserves from start to finish. The Easiest thing WITHIN EVERYONE’S control, regardless of your cooking method, is a good trim. Game-changer Recipe! 👇🏽 Cajun Butter Brisket is a whole new level of flavor. I mixed tallow with ghee to create a buttery flavored tallow and it worked like a charm! The subtle butter notes complemented the brisket perfectly. Might need to tweak the ratio next time for an even more buttery flavor, but for now, I’m convinced! Ingredients: • My Cajun Honey Rub @tftibbq.shop • @marbledmt Brisket • @bearandburtons Everyday Hot Sauce • 50/50 tallow & @fourthandheart Ghee Instructions: • Smoke brisket and buttery tallow mixture at 225-250F • When brisket is probing like butter and internal is roughly 200-205F remove and wrap in a healthy coating of buttery tallow. • Placed in my @yeti cooler to rest for around 3 hrs before slicing in. I’m working on and trying out one of my own lately just messing around. Charcoal and wood are definitely a big win here the Kingsford charcoal and that lumberjack hickory mmmmm. Making a good snake takes work but the pay off is so worth it. Thermo pro probes are great!
