PARecipe for my favorite Caesar salad dressing 🥗
Ingredients:
• 2 large egg yolks (feel free to sub for 2 tablespoons
mayonnaise if you’re concerned about raw eggs. In the US look for pasteurized eggs)
• 1 clove fresh garlic, finely minced or grated
• 4 anchovy fillets (or 2 teaspoons
anchovy paste)
• 2 teaspoons Dijon mustard
• 1 tsp honey (optional, its a personal preference you don’t need it)
• 1 tablespoon fresh lemon juice
• 1 teaspoon Worcestershire sauce
• 1/4 teaspoon salt (adjust to taste)
• 1/4 teaspoon freshly ground black pepper
• 1/2 cup olive oil (light, not extra virgin for a neutral flavor or sub for avocado oil)
• 1/4 cup freshly grated Parmesan cheese, add more if preferred!
For an ultra creamy consistency, feel free to add to a food processor/blender. I usually do by hand.
- romaine lettuce
- I made some sourdough croutons
- more shaved parm on top!
In the video I’m actually making a double batch! So feel free to double ingredients.
