Perfect for layering into desserts, and it stores in the freezer for up to 3 months. Just thaw and use! Hazelnut Praline Recipe • Roasted hazelnuts – 200g • Sugar – 108.6g • Water – 36.7g • Salt – 3.3g • Vegetable oil – 10g 1. Roast hazelnuts at 350°F (175°C) for 10 min to bring out the flavor. 2. In a saucepan, boil sugar, water, and salt until bubbling—then pour over the roasted hazelnuts. 3. Stir until the sugar crystallizes and coats the nuts in a white layer. 4. Keep stirring until the sugar fully melts and turns into a golden amber caramel. 5. Let it cool on a silicone mat, then blend with vegetable oil until smooth. Pro Tip: Don’t stop too early—but don’t let it burn either! Aim for a rich amber color. Once all the white crystals are gone and everything is melted evenly, you’re there. All you wanted to know about roasting nuts! What Happens When Ingredients Brown? Once foods reach a temperature of around 300ºF/150ºC, a browning reaction called the Maillard reaction will take effect. Natural sugars break down and slowly turn to caramel. It is crucial to understand the effect of oven heat on your ingredients, and today I roasted nuts at different temperatures to explain this. Nuts roasted at high temperature naturally browned in a shorter amount of time but resulted in over-roasted burned and bitter nuts Nuts roasted at 300ºF/150ºC took longer to roast but ended up with a delicious flavor, an even color, and a very crunchy texture.
