Blackened Catfish with rice and Cajun cream sauce
Start out by cleaning your fish well and placing on paper towels. Cover the fillets in melted butter and season. I mixed Tony’s, lemon pepper, garlic powder, onion powder, oregano, and heavy smoked paprika to taste. Cover filets well and sear on medium heat for about 3-4 minutes on each side or until 145 degrees internal temp. Remove and add chopped onions, a few tablespoons of butter and cook until butter is nice and nutty. Add heavy whipping cream and season up with your fish seasonings to taste. Remove your sauce and add cooked rice. I left a little pinch of the sauce in the pan for more flavor and season your rice with Tony’s, a pinch of garlic paste and smoked paprika. I also added a few sautéed tri colored peppers to it for color. Top your rice with your fish, cream sauce, fresh lemon juice, and done 🤤
