Back to Basics Ep 2 - Kofta Challow. Ramadan can be tiring, so having something easy to make is always helpful. Kofta Challow, juicy Afghan meatballs simmered in a flavorful tomato sauce and poured over a fluffy bed of basmati rice is exactly what you need to keep your energy going through the month! Ingredients: Meatballs (Kofta) 1 lb Ground Beef 1/2 Onion 1 cup Cilantro 1 tbsp Garlic (minced) 1 tbsp Oil 1 Egg Coriander Cinnamon Cumin Salt (to taste) Tomato Sauce: 1/2 Onion chopped) 1 cup tomato sauce 2 tbsp Tomato Paste 1 tbsp Garlic (minced) Turmeric Coriander Salt & Pepper (to taste) 2 cups Water Recipe: 1. Begin by placing an onion, cilantro, garlic cloves, and oil into a food processor, pulsing until finely chopped, and then pour this mixture over ground beef. 2. Then add an egg, cinnamon, salt, coriander and cumin, and thoroughly mix together. 3. Next, shape the mixture into small balls and gently pressing them into patties.  Set them aside. 4. Start your tomato sauce by adding diced onion, tomato sauce, tomato paste, minced garlic, water, turmeric, and coriander to a large pan. Stir everything together. 5. Allow the tomato sauce to simmer, and then add the meatballs (kofta) to the sauce. Let it all cook for about 30 minutes until the sauce thickens and your Kofta is cooked. Challow Ingredients: 4 cups Basmati Rice (extra long grain) 1/4 cup Oil 1/2 cup Water Salt Recipe: 1. Soak rice in warm water for an hour, then rinse until water runs clear. 2. In a pot, boil water and add drained rice in. Cook 5-7 minutes, before draining completely. 3. Add oil, water, and salt to rice, carefully stir together. 4. Afghan White Rice (Challow) 🇦🇫🍚 is the perfect side for kabobs or gorma, this simple yet flavorful rice is a staple in Afghan homes. 😍 Here’s how I make it: Ingredients: - 2 cups long-grain basmati rice (I use Aabu Barah) - Water (for rinsing and soaking) - 3 tablespoons water (for steaming) - 1/4 cup oil (vegetable or olive oil) - 2 teaspoons salt - 2 tablespoons whole cumin seeds Instructions: 1. Rinse & Soak the Rice: In a bowl, add 2 cups of basmati rice. Rinse the rice 2-3 times to remove excess starch. Then, fill the bowl with water, covering the rice. Let it soak for at least 30 minutes, or overnight for best results. 2. Boil the Rice: In a large pot, add enough water to fill about 2/3 to 3/4 of the pot. Bring the water to a boil with the lid on. Once boiling, add the soaked rice. Let it come back to a boil. When the rice grains have doubled in size (around 7 minutes), it’s time to strain. 3. Strain the Rice: After boiling, carefully strain the rice, discarding the water. 4. Steam the Rice: Return the drained rice to the pot. Add 3 tablespoons of water, 1/4 cup of oil, and 2 teaspoons of salt. Stir gently to combine and ensure the oil evenly coats the rice. 5. Add Flavor & Steam: Create 4-5 holes in the rice with a spoon. Sprinkle the rice with 2 tablespoons of whole cumin seeds. Wrap the pot lid in a kitchen towel and place it on top. Reduce the heat to low and let the rice steam for 10-15 minutes, allowing the flavors to meld and the rice to fully cook. Challow or Afghan white rice is one of the easiest and at the same time hardest recipes to make. An easy recipe that requires a few ingredients. What makes it hard is getting the grains perfectly long, fluffy and separated each time. Sometimes the slightest alteration can turn your fluffy long grain rice into sticky rice. Today I am pairing this deliciously perfect rice with chicken qorma. I have used @mayarsfood Ingredients: 2 cups rice 1 Tbsp rose water ¼ Cup cooking oil 2 Tbsp salt 1 Tbsp palaw masala (optional) 1 tsp cumin seeds 2 Tbsp liquid saffron (optional) Preparation: 1. Wash the rice and rinse the water out at least 3 times, you want the water to be clear. Fill the bowl with water and let rice sit for 2-3 hours. 2. Add water into a pot (about 12 cups) and bring to boil. 3. Drain the water from the rice and add in the boiling water. Add 1 Tbsp oil, 1 Tbsp rose water, and 2 Tbsp salt. 4. Bring to boil and let the rice boil for 4-5 minutes. You should be able to break the rice with your finger. 5. Drain the rice using a colander. Let it sit for a few minutes, so all the water is drained. 6. Preheat your oven to 350 degrees. 7. In a small pan add the rest of oil, 1/4 cup water, and 1 Tbsp palaw masala and put over the stove. Bring to a boil and turn the stove off. 8. Add the rice in the pot and pour the oil mixture over the rice. Mix gently as you don’t want your rice to break. 9. Make the rice in the shape of a mound and sprinkle cumin seeds on top. Add the liquid saffron on one side. (Optional Step) 10. Place a foil over the lid. Close the lid and place the pot in the oven. Bake over 375 degrees for 20 minutes then lower the temperature to 275 for 30 minutes. This gives the rice the best texture. 11. Serve up on a plate.
