FRAujourd’hui : Chaource fermier AOP 🤍
Un fromage tout doux… mais avec un vrai caractère.
Le Chaource, c’est un fromage au lait de vache, à pâte molle et croûte fleurie, originaire de Champagne et de Bourgogne.
Et quand il est fermier AOP, on est sur du très très beau.
✨ Texture : fondante, crèmeuse, presque “beurrée”
👃 Nez : champignon, cave, crème fraîche
👅 Goût : lacté, légèrement salin, avec une belle longueur
📌 Le détail qui change tout :
Le Chaource se déguste idéalement bien à température (sors-le 30 à 45 min avant).
C’est là qu’il devient irrésistible.
🍷 Accords que j’adore :
• Champagne brut (évidemment)
• Bourgogne blanc
• Cidre fermier bien sec
• Et même une bière blanche artisanale
🥖 À tester absolument :
Chaource + miel + noix + pain au levain…
👉 C’est un plateau de fromage “waouh” en 2 minutes.

Nothing is better than having a beautiful Plateau de Fromage accompany your dinner parties. This week as we have our annual Thanksgiving meals in Paris, we went by @source.fromageriecave to help us create the perfect plateau! You’ll want to visit them!
Come in and hear about the four different fromage on our Plateau:
- Bleu de Several, Brebis
- Soumaintran, Vache
- Beaufort, Vache
- Chabichou de Poitou, Chèvre
Tips for your Fromage experiences:
- Know that most times, in a Fromager the Fromage is arranged by mild and/or finishing (hard pressed, washed rind, etc), so no need to get overwhelmed
- Ask your Fromager to advise on what is in season and or special
- Let them know the occasion
- Use the opportunity to discover a whole new cheese!
- Don’t be afraid to share your preferences - do you like mild, hard, creamy, or stinky?
- It’s nice to have a selection of kinds of milk: Chèvre, Vache and Brebis
And speaking of celebrating with cheese - you’ll want to be the first to get the Truffle Brie they will be carrying for the Holidays!

CH@vacherin_mont_dor 🧀- hailing from the Vaud region of the Swiss Jura Mountains 🗻, it is as exclusive as it is silky and luscious. It’s crafted from cow’s 🐄🥛milk produced during the fall and winter months.
After molding and pressing, the wheels are wrapped in spruce kept in a salt brine. The cheese is then aged on spruce boards for at least 17 days, whilst being turned and washed regularly. The cheese is then packed into a spruce box! A decadent Christmas 🎄 tradition, perfect for sharing.
The flavour is rich, with notes of cream, wood, bacon like umami, herbs and hay!
There are an array of ways to prepare and eat this cheese. 🧀
You can serve it fondue style by heating in the oven or let it warm to room temperature.
It can also be enjoyed at room temperature (we recommend leaving it out for 24 hours) with bread, smokey cured meats and cornichons.
Our favourite way to eat it? With champagne and herbs!🥂
🧀🧄🥂 Baked Vacheron Mont-D’or with Champagne and herbs.
What you’ll need:
🧀Your favourite champagne 🥂
🧀Garlic 🧄
🧀Fragrant herbs
Recipe:
🧀Remove the plastic wrap from the cheese.🧀
🧀Chop-up the garlic.🧄
🧀Finely chop the fragrant herbs.
🧀Combine the garlic and herbs.
🧀Place the garlic and herbs on top of the cheese. Make sure you distribute it evenly.
🧀Pour one ounce of champagne 🥂 on top of the cheese 🧀 and herbs.
🧀Bake at 300°F for 10 minutes and enjoy!
