A simple sheet of parchment can completely change how a braise cooks. Chef Thomas Keller demonstrates the classic French technique known as a cartouche. Instead of sealing a pot with a tight lid, a parchment lid allows controlled evaporation while keeping the ingredients properly submerged. This balance is critical in braising. When a pot is fully covered, steam condenses and falls back into the vegetables and meat, creating more liquid. That is ideal for some preparations, such as matignon, where you want moisture to build and form the base of a sauce. But when braising short ribs or similar cuts, chefs often want the liquid to slowly reduce and concentrate while the food cooks. That is where a cartouche comes in. Technique Fold a sheet of parchment paper in half, then fold again repeatedly into a cone shape. Measure the size against the pot or braising vessel. Trim the outer edge to match the diameter. Cut a small hole in the center. Open the parchment and place it directly on top of the braising liquid. The parchment lid keeps the ingredients submerged while allowing steam to escape. This encourages gradual evaporation and natural reduction during cooking in the oven. Educational Insight A cartouche regulates moisture. It slows evaporation enough to protect the meat while still allowing reduction. The result is deeper flavor concentration and better control over the final sauce. Practical Takeaway When braising, think about moisture management. A parchment cartouche gives you the ability to reduce and braise at the same time. The EASIEST lazy caramelized onions!!! 🧅 This slow cooker caramelized onion method changes the game for fall recipes. Freeze in silicone cubes for soups, dips, pasta, or literally anything. 🤎 🧅 Slow Cooker Caramelized Onions (Batch Prep Method) Serves: ~2½ cups cooked onions Total Time: ~12–13 hours (hands-off) Ingredients • 4 lb yellow onions (about 6–8 medium) • 6 tbsp unsalted butter, melted (or olive oil if preferred) • 1½ tsp kosher salt • Optional: ½ tsp sugar (helps speed caramelization slightly) Method: Peel and thinly slice your onions (about ⅛–¼ inch thick). Toss the slices directly in your slow cooker or multi cooker with the melted butter and salt until evenly coated. Cook on LOW for 12 hours — overnight works perfectly. If using an @ourplace dream cooker, do medium heat for slow cooking. Not sure why, but low didn’t fully caramelize them for me! Resist stirring too often; once or twice is enough. After 12 hours, the onions will be soft, golden, and sweet, but with extra liquid. Strain off the liquid to remove any excess moisture. If you’re using a traditional slow cooker, transfer the onions to a skillet and sauté over medium heat for 8–10 minutes until glossy and deeply caramelized for that extra umph! If you’re using the instant pot or another multi cooker, switch to the sauté function on high heat and cook directly in the pot until the onions turn jammy and rich. Taste and season with more salt if needed. Cool completely on a chilled sheet pan, then spoon into silicone ice cube trays or small containers. Freeze for up to 3 months — pop out cubes anytime for soups, dips, sauces, or pasta.
