Ингредиенты:
Для теста:
муки -330 г.
сливочного масла - 120 г.
Разрыхлитель - 1 ч.л.
В отдельной чаше взбить:
1 яйцо + 1 желток
Сахар - 70 г.+ ванильный сахар 1 ч.л.
Соль 1/4
Молоко 50 г.
Начинка:
Вишня - 600 г.
Сахар 120 + кукурузный крахмал 20 г.
Смазать пирог белком
🥧 Пошаговый процесс приготовления
1. Готовим песочную базу
В глубокую миску просей 330 г муки и 1 ч.л. разрыхлителя. Добавь 120 г холодного сливочного масла, порезанного кубиками. Перетри руками или блендером в мелкую однородную крошку.
2.Смешиваем жидкие ингредиенты
В отдельной чаше соедини 1 яйцо + 1 желток, 70 г сахара, 1 ч.л. ванильного сахара, 1/4 ч.л. соли и 50 г молока. Взбей венчиком до растворения сахара.
3. Замешиваем тесто
Влей жидкую смесь в масляную крошку. Быстро замеси мягкое тесто. Оно не должно липнуть к рукам. Раздели его на две неравные части (примерно
2/3 для основы и 1/3
для украшения). Убери в холодильник на 30 минут.
4. Подготавливаем начинку
К 600 г вишни (без косточек) добавь 120 г сахара и 20 г кукурузного крахмала. Тщательно перемешай, чтобы каждая ягода была в «пудре».
5. Сборка пирога
Большую часть теста раскатай и выложи в форму, формируя бортики. Выложи вишневую начинку. Оставшееся тесто натри на терке сверху или сделай красивую «решетку».
6. Финальный штрих и выпечка
Смажь верхушку пирога оставшимся белком (можно посыпать щепоткой сахара для корочки). Выпекай при
180∘C примерно 35-45 минут до золотистого цвета.

BAIt’s PIE season! THIS is the easiest pie crust shield that I’ve found, and it is reusable. Find a cake pan, plate or bowl that is slightly larger than the rim of your pie pan. Wrap a few sheets of foil over the pan to form the shield. Cut from the center out, aim for 8 triangles. Roll them back and then place over your pie. You can roll the triangles back further to expose more crust, or roll them inward to cover more. Add to your pie once you want to shield from further browning.
