It’s thick but creamy😋 Such a yummy snack idea! • More healthy & easy recipes like this in my new Ebook: Healthy Food Made Easy which has 85 low-effort recipes: breakfasts, lunches, snacks, dinners & desserts🤩 The link is in my profile or go to fitfoodieselma.com🥰 • this makes 4 servings: 1/2 cup chia seeds (120 ml) 3/4 cup milk of choice (180 ml) 1 1/2 cups thawed frozen raspberries (360 ml / 200 g) 1 cup Greek yogurt (240 ml / 250 g) 3 tablespoons maple syrup 2 teaspoons vanilla extract • 1. Blend the raspberries, milk, maple syrup and vanilla extract together 2. Pour into a bowl. Add the chia seeds and Greek yogurt and stir well 3. Stir once after 20 – 30 minutes so the chia seeds distributes evenly 4. Let set in the fridge for at least 6 hours or overnight 5. If after chilling it’s thicker than you want, you can always stir in 1 – 2 tablespoons milk 6. For this recipe I used @promix’s Madagascar Vanilla protein powder, but you can also use their Chocolate flavor! 🍦 It’s made with clean, all natural ingredients and is SO delicious in this chia pudding recipe, smoothies and more! You can use the discount code ✨CLAIRE✨ for 10% Promix! What you need: - 2 tbsp chia seeds - 1/4 cup hot water - 3/4 cup greek yogurt - 1 serving vanilla protein powder - 2 tbsp powdered peanut butter - 2 tsp maple syrup or monk fruit sweetener - 1 tbsp dark chocolate chips - 1 tsp coconut oil How to: - Add chia seeds and hot water to a bowl. - Mix for about 30 seconds until the chia seeds gel up. - Stir in greek yogurt, protein powder, powdered peanut butter and maple syrup until smooth. - Optional to scoop into a smaller jar or glass, or you can leave it in the bowl and smooth out the top of the chia pudding. - Add the chocolate chips and coconut oil in a microwave safe bowl and heat on 30 second increments until smooth. Add the Greek yogurt, chia seeds, vanilla, and honey. Mix until smooth and evenly combined. Top with extra blueberries and a sprinkle of cacao nibs or dark chocolate. Pudding Ingredients ½ cup chia seeds ¾ cup plain Greek yogurt 1 cup milk of choice (coconut milk is preferred) 1¼ cups mango chunks (about 1 large ripe mango, fresh or frozen) ¼ cup unsweetened shredded coconut ½ cup coconut cream ((solid part from can)) 3 tablespoons maple syrup (can sub honey) 1 teaspoon vanilla extract Pinch of salt Toppings (optional) Greek yogurt dollop diced mango toasted coconut flakes honey drizzle lime zest In a blender, add the milk, mango, shredded coconut, maple syrup, vanilla, and a pinch of salt. Blend until completely smooth and bright. Add the coconut cream to the blender and blend again briefly, just until combined. In a medium bowl, add the Greek yogurt. Pour in the mango coconut mixture and whisk until fully smooth. Stir in the chia seeds. Let sit for 5 minutes, then stir again to prevent clumping.
