Add the white sugar and light brown sugar, then whisk together until well combined and fluffy. •Add the eggs, vanilla extract, and chocolate chips or chunks. Whisk until fully incorporated. •Add the flour, baking powder, baking soda, and salt. Gently mix until just combined, do not overmix. •Portion the dough into 85-90gballs. •Place the cookie dough balls onto a tray and freeze for at least 30 minutes (or overnight for best results). •Preheat oven to 175-180C (350°F). Bake for 10-15 minutes or until the tops are lightly golden while the centres remain soft. •Remove from the oven and let cool slightly. •Serve warm with ice cream. NOTE: Store any extra dough balls in an airtight container or freezer bag and freeze for later. Bakery style chocolate chip cookies 🍪 Ingredients 3/4 cup (170g) unsalted butter, cold and cubed 3/4 cup (150g) dark brown sugar 1/3 cup (65g) granulated sugar 1 large egg + 1 egg yolk, room temp 2 tsp vanilla bean paste 2 cups (240g) all-purpose flour 1 tsp cornstarch 1 tsp espresso powder 1/2 tsp baking soda 1 tbsp milk powder 1/4 tsp baking powder 3/4 tsp salt 1 cup semi sweet chocolate chips 3/4 milk chocolate chips Flaky sea salt for topping Method : In a bowl add all purpose flour, baking soda, baking powder, milk powder, espresso powder , corn starch and salt. Mix well to combine. In a stand mixer fitted with the paddle attachment, add the cold cubed butter, brown sugar, and granulated sugar. Mix on medium speed for about 2–3 minutes, until the mixture looks creamy. Add the egg, egg yolk, and vanilla bean paste. Mix until fully combined, scraping down the sides of the bowl as needed. Gradually add the dry ingredients to the wet mixture. Mix on low speed just until combined—do not overmix. Stir in the semi-sweet and milk chocolate chips until evenly distributed. �Cover and refrigerate the dough for at least 2 hours ( or up to 24 hours for deeper flavor and thicker cookies). Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper. Scoop large portions of dough (about ounce each) and roll loosely into balls. For a bakery look, keep them tall rather than flattened. Bake for 15-16 minutes, or until Edges are set and lightly golden. Centers are still soft and slightly underbaked. Crispy edges, chewy center, dark and milk chocolates, and a sprinkle of sea salt. and the best part? its a no mixer and one bowl recipe! ✨ Classic Chewy Chocolate Chip Cookie🍪✨ 110 g melted butter (½ cup) 100 g granulated white sugar (½ cup) 65 g light brown sugar (⅓ cup) 1 large egg 2 tsp vanilla extract 150 g all-purpose flour (1¼ cups) ½ tsp baking soda ½ tsp salt 100g dark chocolate chips (1/2 cup) 50g milk chocolate chips (1/4 cup) Whisk melted butter and sugars until it looks like wet sand. Add egg and vanilla, whisk until combined. Sift in flour, baking soda, and salt. Fold until almost combined, then fold in chocolate. Scoop dough (9–11pcs) and chill in the fridge for at least 1 hour or overnight. Preheat oven to 180°C (350°F). Roll dough balls and place on lined tray, 2 inches apart. Bake 9–12 mins until edges are set (underbake for chewy cookies). Nyc style thick chocolate chip cookies 🍪 Ingredients 2 1/4 (285g) cups all purpose flour 1/4 tsp baking soda 1/2 tsp baking powder 1 tbsp corn starch 1 cup (200g) dark brown sugar 3 tbsp (37g) granulated sugar 1 egg + 1 egg yolk, cold 1 cup (225g) unsalted butter, cold 1 tbsp vanilla bean paste 1 cup (250g) semi sweet chocolate chips 1/2 cup (125g) milk chocolate chunks Pinch of salt 1/2 tsp espresso powder coffee Method: In a bowl or stand mixer add cubed cold butter. Beat on high until creamy for about 2 min. Add in brown sugar and granulated sugar. Beat again for 2-3 min on high until well combined. Add in the egg and egg yolk along with the with vanilla bean paste. Mix on high for 3-4 min until everything is well incorporated. In a separate bowl add all purpose flour, baking powder, baking soda, salt, corn starch,instant coffee. Mix to combine. Gradually add dry ingredients to the wet mixture. Add in chocolate. Mix until just combined, do not over mix the batter at this stage. Scoop 4 ounces tall cookie dough balls on baking sheet. Freeze the dough balls for at least 2 hours or overnight. Pre heat oven to 350 F. Place 3-4 cookies on a prepared baking sheet, leaving approximately 4 inches of space in between each cookie. Bake for 16-18 min or until the edges are golden and crispy and center is chewy and soft. Let cool completely before serving and enjoy. #cookie #chocolatechipcookies

BROWNED BUTTER ✨ that’s all. 👉🏼2. Cornstarch. I’ll never go back to being a non believer of cornstarch in cookies! It creates that fluffy texture and keeps them soft like store bought cookies! I add about 20-25g in all my cookies! 👉🏼3. Chilling/freezing. This is a big key to getting this extra tall shape for cookies! It helps the cookies bake in a way that gets them perfectly browned on the outside, and soft and gooey on the inside. I usually freeze my cookie dough balls overnight when I’m looking to get this tall shape! 👉🏼4. Shaping-always shape your cookie dough into very tall balls, like cylinders! This makes sure they don’t spread out as easy and they stay nice and tall in the middle! 👉🏼5. High temps! I bake my cookies at a higher temp, typically 375-390 degrees F. This helps the cookies cook quicker on the outside and keep their shape, whereas a low and slow method can make them spread out and flatten down. I have a few 👩‍🍳 But first, make sure you’re following @tismtreats for all the baking tips! 1. 1 great tip for sweet bakery style cookies is to finish them off with a sprinkling of flakey sea salt! This balances the flavors BEAUTIFULLY and makes them just a little fancier 🥰 (You can comment Salt if you want a link to my flakey salt I get on Amazon!!) 2. Cornstarch. This wasn’t always in my cookie recipes, but it is these days after seeing the difference it has made. Cornstarch helps your cookie keeps its fluffy texture while also staying nice and thick! I use it in all my cookie recipes. A couple of tablespoons added in can make all the difference! 3. Refrigeration, or freezing. I always freeze my cookie dough balls so they retain their tall shape! However, if you don’t mind a flatter cookie, you don’t always have to do this. And on the other hand, Refrigeration helps the cookie dough balls develop a deeper flavor and set up nicely!
