Italian Chopped Salad 🥗🔪 This *Incredible* Italian Chopped Salad is what I make when I want something fresh, filling, and borderline addictive. No cooking. No stove. No stress. It comes together in 10 minutes (or faster, if you chop chop!), is high protein, and packed with an incredible amount of micronutrients to actually fuel your body, not just fill it. It’s crunchy, savory, salty in the best way, and one of those meals that somehow feels both light and satisfying. Perfect for busy weekdays, lazy dinners, or when you want something healthy without feeling like you’re “dieting.” [Recipe] For the salad… 3 c butter or romaine lettuce, chopped 3 c mixed greens, chopped 1/2 c green olives, sliced 2/3 c cherry tomatoes, chopped 1/4 c shallot, diced 1/3 c chickpeas 1/2 c black olives, sliced 1/4 c pepperoncini, sliced 1 c pepperoni, cubed 1 c salami, cubed For the dressing… 1/2 Tbs garlic purée 1 Tbs Dijon mustard 1 Tbs Italian seasoning 2 Tbs pepperoncini brine from the jar 1/4 c red wine vinegar 1/2 c olive oil 1/2 tsp sea salt Chop the vegetables and add to a large mixing bowl. Cube or chop the pepperoni and salami - you can also add some grilled chicken for extra protein - and add the meats to the bowl as well. To make the dressing, add all the ingredients to a jar with a lid and give it a shake. Pour the dressing over the salad, give it a toss, and serve! If you’re not dairy free, chopped mozzarella or shaved Parmesan are excellent additions to this salad. If you’re looking for a quick high-protein salad, a no-cook healthy meal, or an easy Italian-inspired recipe that tastes like something you’d order out, this one’s it. It’s the perfect tangy and briny counterpart to your favorite slice 🍕 Serves: 6 as a side Total Time: 20 minutes Ingredients: 3 heads romaine lettuce (12 oz), chopped 2 cups halved cherry tomatoes 1/2 cup black olives 1/2 cup sliced pepperoncinis 1/2 red onion, thinly sliced (option to soak in cold water for 5-10 minutes to make it more mild) 1 cup provolone cheese or low moisture mozzarella, diced ⅓ cup freshly grated Parmesan cheese 4 oz salami, chopped Italian Vinaigrette: 1/2 cup extra virgin olive oil 1/4 cup red wine vinegar or vinegar of choice 2 teaspoons lemon juice 2 teaspoons Dijon mustard 1 teaspoon honey 1 teaspoon Italian seasoning 2 tablespoons freshly grated Parmesan cheese, optional Instructions: First make the dressing by whisking together all ingredients until combined. You can also shake it up in a jar. Pour 1-2 tablespoons of the dressing and a pinch of salt over the cherry tomatoes and stir to combine. Fresh crunch from cucumber + lettuce. Golden pasta “croutons” on top. Thanks @tablebymax for the inspo! Save this one 👇 Makes 3–4 serves Ingredients Salad • 250g short pasta (penne, rigatoni or farfalle) • 1–2 tbsp extra-virgin olive oil • Salt & pepper • 1 iceberg or cos lettuce, chopped • 1 punnet cherry tomatoes, halved • ½ small red onion, finely diced • 1 Lebanese cucumber, diced • Handful fresh parsley, finely chopped Dressing • 200g Greek yoghurt • 1 tsp Dijon mustard • 1.5 tbsp lemon juice • 1 tbsp extra-virgin olive oil • ½ tsp garlic powder • Salt and pepper, to taste Optional • Parmesan cheese • Protein of your choosing Method 1. Cook pasta according to packet instructions. Drain well and let excess moisture evaporate for a few minutes. 2. Toss pasta with extra-virgin olive oil, salt and pepper. Air fry at 200°C for 15–20 minutes, shaking every 5 minutes, until golden and crunchy. Let cool slightly. 3. Combine lettuce, cherry tomatoes, red onion, cucumber and parsley. 4. Whisk dressing ingredients until smooth. 5. Toss salad with dressing. 6. Top with crunchy pasta just before serving. Tip: If prepping ahead, keep the dressing and pasta separate so it stays fresh.
