Dialing in isn’t so much about chasing the right numbers, it’s about controlling the extraction 🫡 When you’re pulling a shot, you are extracting flavors. When you extract too many compounds, this leads to over extraction resulting in bitters over powering the good parts of the coffee. When the compounds are not extracted enough meaning under extraction, then that can result in sourness, papery, thin flavors etc. Dialing in is simply adjusting variables (dose, yield, grind size) so extraction lands in the sweet spot. If your espresso doesn’t taste right, it’s not random, it’s feedback. In the world of espresso, channeling is the "path of least resistance." When you force hot water through a puck of ground coffee at high pressure (usually 9 bars), the water searches for any cracks, air pockets, or uneven density. Instead of flowing evenly through all the coffee, the water rushes through these weak points. This results in a "salty-sour-bitter" mess: the coffee in the channel is over-extracted (bitter), while the rest of the puck is under-extracted (sour/weak). Here's 5 guaranteed Steps to Avoid Channeling To get a perfect, syrupy extraction, you need to create a perfectly uniform "filter" of coffee. Here is how to do it: 1. Use a High-Quality Burr Grinder Blade grinders or cheap burr grinders create "fines" (micro-dust) and "boulders" (large chunks). The water will naturally race around the boulders and get stuck behind the fines. A consistent grind size is your first line of defense. 2. Practice WDT (Weiss Distribution Technique) I use tools from @normcorewares After grinding into your portafilter, use a tool with thin needles to stir the grounds. This breaks up clumps caused by static and ensures the density of the coffee is the same from the edges to the center. 3. Level Before You Tamp Before applying pressure, ensure the bed of coffee is flat. If the coffee is mounded on one side, tamping will compress that side more than the other, creating a density imbalance that water will exploit. 4. Apply a Level, Consistent Tamp The goal isn't to "crush" the coffee with maximum strength, but to remove all air gaps. Use a leveler or a spring-loaded tamper to ensure the puck is perfectly horizontal. A "slanted" puck is a guaranteed recipe for a side-channel. 5. It doesn’t need to be fancy—just accurate to 0.1 g, with a shot timer, and small enough to fit on your drip tray. This is the only way to really know how much coffee you’re using and what espresso ratio you’re pulling. The second “tool” is actually two things: a dosing funnel and a WDT tool. Even the budget ones work really well. The funnel keeps all the coffee inside the basket, and the WDT tool breaks up clumps and helps distribute the coffee evenly. This makes a huge difference in preventing channeling. And the third tool is a leveling tamper. It helps you get a flat, even coffee bed every single time and saves you from a lot of bad shots.
