SAOur team spent time at Aduyon Coffee Processing with @rodyiotacdoy , a young producer from La Trinidad whose work has gained national recognition. At the Philippine Coffee Quality Competition 2025, he placed first in the Arabica Small Scale Farms category, setting a remarkable standard for Philippine coffee.
The visit gave our team the chance to experience coffee beyond the cup. From observing the processing stages to asking questions and understanding the level of care behind every lot, it became a meaningful learning moment for everyone while also being a fun and memorable time in the mountains.

JOPhilippine coffee is best black ๐ต๐ญโจ
Arabica coffee from the Philippines is known to have a nutty flavor but Aduyon Farms processes their beans through anaerobic fermentation which gives it that fruity and sometimes winey flavor. This is grown by Rodyio Tacdoy in Wangal, La Trinidad, Benguet, Philippines.
I just recently learned that coffee beans go through fermentation depending on who is farming it from my friend Tim (@timdrinkscoffee) and through reading more about Rodyio Tacdoy and Aduyon Farms. I always wondered how they could get other flavors into the beansโฆ and thatโs how they do! You can get all the flavor notes when you drink it black.
This was the award winning coffee in the Arabica category at the Philippine Coffee Quality Competition 2025. After experiencing it myself, I can see why. Itโs naturally sweet and well-balanced in flavors for the most part (couldnโt find the pineapple taste but it may have just been me).
I didnโt believe this coffee could be enjoyed black but thank you friend, @robert.sonza15 from @himigcoffeeroasters for convincing me! And thank you @czar.vils for serving me this amazing coffee. โค๏ธ
Iโm excited to continue my journey, learning more about Philippine coffee in the diaspora. And my wish is to one day go to the mountains and experience the farming processes.

GIAfter picking the cherries, farmers dry their coffee aiming to hit a moisture target of 10โ12% for green beans.
That narrow window matters more than most people realize. Itโs where flavor stays stable, sugars are preserved, and the coffee holds its potential.
Sadly, most coffee farmers in the Philippines donโt own a moisture meter.
They check if their coffee is dry enough by touch. They bite down on it sometimes. They assess it by gut feel.
And many of them are incredibly accurate.
But feel doesnโt give you a number. And without a number, you risk your harvest. Go above 12%, and it will be risky for mold development. Drop below 9%, and the coffeeโs flavor fades before it even reaches a roaster.
Months of careful farming, lost in the last step.
Now they donโt have to guess.
With the help of our friends from @digitizefluid and their @coffmeter, we were able to put moisture meters directly into the hands of the farmers and cooperatives we work with, especially now, during drying season for most areas.
One small tool that can drastically improve their cup quality, consistency and income.
