If you do one thing this weekend, it’s make my butter confit garlic. Here’s the recipe but it’s ✨ relaxing ✨ Butter confit garlic 500g salted butter 7 bulbs of garlic, peeled Rosemary sprigs (if you have them) Dried chillies (if you have them) Pinch of flakey salt Method 1. Cube and melt your butter 2. Set in the fridge until hard 3. Once set make a hole in the corner and pour out the buttermilk, save for another use 4. Preheat the oven to 130°C 5. In an oven proof dish add the peeled garlic, butter and any other ingredients then bake in the oven for 1 hour 30 mins 6. Keep checking on the garlic just to make sure it’s not burning and give it a stir occasionally. If it looks like it’s cooking to fast then turn the oven temp down 7. Once golden and soft remove it from the oven and use it for any purpose ever! It starts with a technique called “confit”, where meat is cooked low and slow in its own fat. This method is usually reserved for tougher cuts that need time to break down. The result is rich, tender meat that falls apart effortlessly. That part is key—it needs to be soft and fatty enough to blend into a spreadable, tacky mixture. The recipe itself is super simple, but it does take some patience and a few specialty ingredients. Can’t get your hands on duck? No worries, it’s actually more popular to make this with pork shoulder or belly. Duck Rillettes
 Serves: 6–8
Prep Time: 20 minutes
Cook Time: 3 hours
Inactive Time: 12–24 hours (optional dry brine + chilling) Ingredients
3 duck legs (thigh + drumstick)
1 Tbsp kosher salt (for dry brine)
2–3 cups duck fat (enough to fully submerge the legs)
4 garlic cloves, smashed
4 sprigs thyme
2 strips orange peel (no white pith)
2 bay leaves
1 tsp black peppercorns Technique 1. Rub duck legs with kosher salt and refrigerate, covered, for 12–24 hours. Wipe off excess salt before cooking. 2. Preheat oven to 275°F (135°C). Place duck legs skin-side down in a Dutch oven. 3. Add garlic, thyme, orange peel, bay leaves, and peppercorns to the pot. 4. Pour in duck fat to fully submerge the legs. 5. Cover with lid or foil and bake for 3 hours until meat is very tender. 6. Remove duck legs and cool slightly. Discard skin and bones, then shred meat with two forks. 7. Mix shredded duck with enough warm duck fat to create a moist, tacky texture. Adjust salt if needed. 8. Pack into jars or ramekins, smooth the top, seal with a layer of duck fat, and chill for at least 4 hours or overnight. To serve, let the Rillettes come to room temperature before spreading on crusty bread. Ama genel olarak her şey için uygulanır. Örneğin ördek confit denemenizi tavsiye ederim nefistir. Özetle: düşük derecelerde, yağın içinde yavaşça pişirme yöntemidir. Hadi başlayalım ;) Malzemeler : 2 yumurta sarısı (veya daha fazla) Zeytinyağı (sarının üzerini örtecek kadar) 1 dal taze kekik 5–6 adet tane karabiber Yapılışı : 1. Metod : Fırını 75 dereceye ayarla. Fırına dayanıklı küçük bir kaba zeytinyağını koy. Kekik ve tane karabiberi ekle. Kabı fırına koyup yağı 65–68°C’ye kadar ısıt. (Termometre kullan) Yağ bu sıcaklığa ulaştığında, yumurta sarılarını çok dikkatli şekilde içine bırak. Kabın üzerini folyo ile kapat. Fırında 12 dakika pişir. 2. Metod : Termometre yoksa, daha yavaş ama işe yarayan yöntem. Küçük bir kaba zeytinyağı, kekik ve tane karabiberi koy. Yumurta sarılarını soğuk yağa çok dikkatli bir şekilde yerleştir. Kabın üzerini folyo ile kapat. Hepsini birlikte 75 dereceye ayarladığın fırına yerleştir. Yağın sıcaklığı 65 derece civarına çıkana kadar yaklaşık 15–20 dakika bekle. Sıcaklığa ulaştıktan sonra ekstra 12 dakika daha pişir. Kıvamı kontrol et - dışı jelleşmişse, içi akışkansa tamamdır. Not: Sarı hızlı pişerse patlar, yavaş pişerse kıvamı harika olur.
