The shells have to be fried fresh and they have to be filled right before you eat them. Hereโ€™s the full recipe if you want to try it โ†“ โธป Pistachio Cannoli Yields 24 Shells โ€ข 375 g (3 cups) all-purpose flour โ€ข 50 g (4 tbsp) caster or fine sugar โ€ข 1 tsp cinnamon โ€ข 45 g (3 tbsp) cold butter โ€ข 2 eggs, beaten โ€ข 1 tbsp (15 mL) Marsala โ€ข 2 tbsp (30 mL) vinegar โ€ข 2 tbsp (30 mL) cold water โ€ข Egg white (for sealing) โ€ข Neutral oil for frying Mix dry ingredients. Cut in butter until sandy. Add wet ingredients and knead 8โ€“10 minutes until smooth. Rest 1 hour. Roll very thin. Cut 4โ€“5 inch (10โ€“12 cm) circles.
