Classic chocolate chip cookies 🤤 Yields: 15-16 Cookies INGREDIENTS: 230g Cold Chopped Unsalted Butter 160g Caster Sugar 160g Light Brown Sugar 450g Chocolate Chunks or chips 475g Plain Flour 1 tsp Salt 3 tsp Baking Powder 3/4 tsp Baking Soda 2 Eggs 1 Egg Yolk 1 tsp Vanilla INSTRUCTIONS: •In a large mixing bowl, add the cold cubed butter and whisk until slightly creamy. Add the white sugar and light brown sugar, then whisk together until well combined and fluffy. •Add the eggs, vanilla extract, and chocolate chips or chunks. Whisk until fully incorporated. •Add the flour, baking powder, baking soda, and salt. Gently mix until just combined, do not overmix. •Portion the dough into 75-80g balls. •Place the cookie dough balls onto a tray and freeze for at least 30 minutes (or overnight for best results). •Preheat oven to 165-170C. Bake for 10-15 minutes or until the tops are lightly golden while the centres remain soft. •Remove from the oven and let cool slightly. •Serve warm with ice cream. NOTE: Store any extra dough balls in an airtight container or freezer bag and freeze for later. Cookie 101: Honest tips and tricks from a home baker🫶🏻 ✨BUTTER TEMPERATURE MATTERS MORE THAN YOU THINK: • Cold butter cubes → thick, chunky, bakery-style cookies • Soft or melted butter → thinner, flatter cookies Your butter choice literally decides the texture before baking even starts. ✨FROZEN VS ROOM TEMPERATURE DOUGH BALLS: • Frozen cookie dough balls → thick, puffy, less spread • Room temperature dough balls → thinner, more spread If you love chunky cookies, freezing is your best friend. ✨TO CHILL OR NOT TO CHILL? •Want thinner cookies? You can bake the dough right away but chilling for at least 2–3 hours still improves flavor • Want thick cookies? Chill first, then freeze before baking. That’s the real secret to height and structure. Chilling develops flavour. Freezing controls spread. ✨BAKING IS WHERE MOST MISTAKES HAPPEN: You can follow a recipe perfectly… and still mess up at the baking stage. Most home bakers: Overbake Or panic and underbake. I personally don’t walk away from the oven. I bake at 165–175°C (fan oven) until: • The edges are golden brown • The center still looks slightly soft That soft center is exactly what you want. ✨SOFT CENTER DOESN’T MEAN UNDERCOOKED: •Cookies continue baking on the tray after you remove them. •They need about 30 minutes to fully set. •If your cookies are already hard in the center when you take them out, they’re overbaked and they’ll become even firmer once cooled. ✨DON’T OVERMIX: •Once flour goes in, mix just until combined. Overmixing develops too much gluten and makes cookies tough instead of tender. ✨FOR THAT BAKERY LOOK: • Gently bang the tray while cookies are still hot for crinkly tops. • Reshape immediately using a large round cookie cutter while they’re still soft. Yes, you can fix uneven cookies. Always😉 ✨MY PERSONAL FAVORITE TRICK: Add extra chocolate chips/chunks on top immediately after baking while the cookies are still hot. Chocolate chip cookie fries ( makes 10 large cookies fries ) 🍪 Ingredients: 1/2 cups (115g) unsalted butter, softened 1/2 cup (100g) light brown sugar 1/4 cup (67g) granulated sugar 1 large egg + 1 egg yolk , room temp 1 tbsp vanilla bean paste 1 1/2 (180g) cups all purpose flour, spooned and leveled 1 tsp corn starch 1 tsp espresso powder , optional 1/2 tsp baking soda 1/2 tsp flakey sea salt 1 cup mini semi sweet chocolate + more for topping. Method: Preheat oven to 350 F and line a baking sheet with parchment paper. In bowl, whisk together flour, cornstarch, espresso powder, baking soda, and salt. Set aside. In another bowl, add softened butter. Mix in brown sugar and granulated sugar. Add the egg, egg yolk, and vanilla extract. Whisk for about 1–2 minutes until the mixture becomes smooth and paste forms. Gradually add the dry ingredients into the wet mixture. Gently fold together using a spatula until just combined. Do not overmix. Fold in the mini chocolate chips evenly throughout the dough. Transfer all the cookie dough onto the prepared baking sheet. Press and flatten the dough evenly into a large rectangle, about 1/2 inch thick, making sure the thickness is uniform throughout. Freeze the flattened dough until firm (about 20–30 minutes). Once firm, use a sharp knife or bench scraper to cut the dough into long fry shapes Carefully separate the fries slightly so they aren’t touching. Freeze again for 30 minutes to help them hold their shape while baking. Place not more the 4 cookie fries on a baking sheet. Spacing them evenly. Bake at 350°F for 13 minutes, or until the edges are lightly golden and centers are set. Let cool on the baking sheet . They’re soft, chewy, loaded with chocolate, and made with simple ingredients you already have at home. Ingredients • 1½ cups butter, softened (3 sticks) / 340 g • 1¼ cups granulated sugar / 250 g • 1¼ cups packed brown sugar / 275 g • 1 tbsp vanilla extract / 13 ml • 2 eggs • 4 cups all purpose flour / 500 g • 2 tsp baking soda / 10 g • 1 tsp salt / 5 g • 12 oz semi sweet chocolate chips / 340 g • 12 oz milk chocolate chips / 340 g • Optional: flaky sea salt for topping Instructions 1. Preheat oven to 350°F. 2. In a large bowl, mix the butter, sugar, brown sugar, vanilla, and eggs until smooth. 3. Stir in the flour, baking soda, and salt until just combined. 4. One of the most common questions I get is: “can I reduce the sugar in this recipe”. And my answer is usually: you can… but you need to temper your expectations. I made the same exact chocolate chip cookie recipe four ways to show you exactly what to expect if you reduce the sugar: 50% of the sugar called for 75% 100% (as-written) 150% The results: Cookies made with less sugar were thicker, drier, paler, more cake-like and crumbly and had less spread. Cookies made with more sugar were thinner, spread more, had darker (more caramelized) edges and chewier centers. They were chewier and stayed softer. They were also my favorite 😉 Sugar isn’t just sweetness. It melts in the oven to encourage spread, binds moisture to keep the cookies soft, and caramelizes in the oven for golden color and deep flavor. When you reduce that you’re changing the whole chemistry of the cookie. My advice? Stick to the recipe as written first and then adjust according to your own preferences.
