Classic chocolate chip cookies 🤤 Yields: 7-8Cookies INGREDIENTS: •115g cold chopped unsalted butter •80g caster sugar •80g light brown sugar •220g chocolate chunks or chips( you can increase or reduce this according to your preference) •238g plain flour •½ tsp salt •1 & ½ tsp baking powder •¼ tsp baking soda •1 whole egg + egg yolk •½ tsp vanilla INSTRUCTIONS: •In a large mixing bowl, add the cold cubed butter and whisk until slightly creamy. Add the white sugar and light brown sugar, then whisk together until well combined and fluffy. •Add the eggs, vanilla extract, and chocolate chips or chunks. Whisk until fully incorporated. •Add the flour, baking powder, baking soda, and salt. Gently mix until just combined, do not overmix. •Portion the dough into 85-90gballs. •Place the cookie dough balls onto a tray and freeze for at least 30 minutes (or overnight for best results). •Preheat oven to 175-180C (fan oven)(350°F) Bake for 10-15 minutes or until the tops are lightly golden while the centres remain soft. •Remove from the oven and let cool slightly. •Serve warm with ice cream. NOTE: Store any extra dough balls in an airtight container or freezer bag and freeze for later. Nyc style thick chocolate chip cookies 🍪 Ingredients 2 1/4 (285g) cups all purpose flour 1/4 tsp baking soda 1/2 tsp baking powder 1 tbsp corn starch 1 cup (200g) dark brown sugar 3 tbsp (37g) granulated sugar 1 egg + 1 egg yolk, cold 1 cup (225g) unsalted butter, cold 1 tbsp vanilla bean paste 1 cup (250g) semi sweet chocolate chips 1/2 cup (125g) milk chocolate chunks Pinch of salt 1/2 tsp espresso powder coffee Method: In a bowl or stand mixer add cubed cold butter. Beat on high until creamy for about 2 min. Add in brown sugar and granulated sugar. Beat again for 2-3 min on high until well combined. Add in the egg and egg yolk along with the with vanilla bean paste. Mix on high for 3-4 min until everything is well incorporated. In a separate bowl add all purpose flour, baking powder, baking soda, salt, corn starch,instant coffee. Mix to combine. Gradually add dry ingredients to the wet mixture. Add in chocolate. Mix until just combined, do not over mix the batter at this stage. Scoop 4 ounces tall cookie dough balls on baking sheet. Freeze the dough balls for at least 2 hours or overnight. Pre heat oven to 350 F. Place 3-4 cookies on a prepared baking sheet, leaving approximately 4 inches of space in between each cookie. THICK, chunky, soft & chewy chocolate chip cookies! After weeks of testing, I’m so happy to share my chocolate chip cookie recipe with you guys! These are true bakery-style cookies that are super thick, and they come out perfect every single time. INGREDIENTS 1 cup cold salted butter, cut into cubes 1 cup packed light brown sugar ¾ cup granulated sugar 3 large cold eggs 2 teaspoons vanilla extract 4½ cups all-purpose flour 2 teaspoons cornstarch 2 teaspoons baking powder ½ teaspoon baking soda 3 cups (about 18 oz) semi-sweet chocolate chips DIRECTIONS Line 2 baking sheets with parchment. Whisk flour, cornstarch, baking powder, and baking soda. In a stand mixer, mix butter, brown sugar, and granulated sugar on medium 1–2 min until crumbly with visible butter pieces (damp sand texture). Add eggs one at a time, mixing briefly after each. Mix in vanilla. Do not overmix. Add dry ingredients; mix on low just until dough comes together. Fold in chocolate chips by hand with spatula. Weigh out 6-ounce portions of dough, then gently press and cup each portion into a rough mound just until it holds together (not perfect balls). Each cookie should be exactly 2½ inches wide and 2½ inches tall. Cookies must be exactly 6 oz and 2½ inches tall & 2½ wide for proper baking. Freeze the dough for at least 2 hours before baking, overnight is better. Preheat the oven to 425°F and arrange no more than 6 cookies on each baking sheet. Bake one sheet at a time on the center rack for 13–15 minutes (I do 14½ minutes). Edges should be golden with a slightly lighter center. Scoop ½ teaspoon Nutella onto individual cling-wrap squares. Fold to seal and freeze until solid. (Repeat for however many Nutella stuffed cookies you plan to make.) •In a large mixing bowl, add the cold cubed butter and whisk until slightly creamy. Add the white sugar and light brown sugar, then whisk together until well combined and fluffy. •Add the eggs, vanilla extract, and chocolate chips or chunks. Whisk until fully incorporated. •Add the flour, baking powder, baking soda, and salt. Gently mix until just combined, do not overmix. •Portion the dough into 90g balls. Press a frozen Nutella piece into the centre of each dough ball, seal well, and roll into a smooth ball. •Place the stuffed cookie dough balls onto a tray and freeze for at least 30 minutes (or overnight for best results). •Preheat oven to 180°C (350°F). •Take any shape baking dish circle, square, rectangle anything and line it with parchment paper. Arrange frozen cookie dough balls in it leaving some space between them. •Bake for 10-15 minutes (timing depends on the type of pan) or until the tops are lightly golden while the centres remain soft and gooey. •Remove from the oven and let cool slightly. •Serve warm with ice cream and chocolate sauce enjoy!✨ NOTE: Store any extra dough balls in an airtight container or freezer bag and freeze for later. I tested 100 recipes and this is the winner 👑 Brown Butter Cookie Dough: -1 cup brown sugar + 1/2 cup white sugar -1 cup unsalted browned butter -2 large eggs, room temp -2 tsp vanilla bean paste -2 cups all-purpose flour -3/4 tsp baking soda -1/4 tsp baking powder -1/4 tsp salt -2 cups semi-sweet chocolate Brownie Batter -1/2 cup salted butter, melted -2 tbsp olive oil -2 eggs -3/4 cup flour -1/2 cup brown sugar + 1/4 cup white sugar -1 tsp vanilla -1 cup chocolate chips (melted) -1/4 cup cocoa powder For on Top: -3 oz semi-sweet chocolate chunks Instructions: 1. Make the cookies first: Brown butter and let cool slightly. Whisk with sugars with the browned butter until glossy, then add eggs and vanilla. Sift in the dry ingredients until just combined, then fold in chocolate. Chill for at least 1 hour. 2. Preheat oven to 350°F (175°C) and line an 8x8 pan with parchment. 3. Make brownie batter: Melt butter with chocolate chips, whisk in olive oil and cocoa powder. In another bowl, whisk sugars, eggs, and vanilla. Combine with chocolate mixture, then fold in flour until just mixed. 4. Assemble: Pour half the brownie batter into the pan and spread evenly.
