How to blanch vegetable 🥦 Follow @kellyscleankitchen for more cooking tutorials! Blanching is a cooking technique that involves briefly immersing vegetables or other foods in boiling water and then rapidly cooling them in ice water. Reasons for this are: * Preservation of Color: Blanching helps vegetables maintain their vibrant color. The process stops enzyme activity that can lead to color and flavor changes over time. If you have a green food and want to keep it bright green, it is best to blanch it! * Texture Preservation: It partially cooks the vegetables, making them tender but still crisp. This is great for items of food you want to grill, or finish by sautéing, but would be too al dente to do just the second part of cooking alone. For example, you can’t just grill broccoli from it being raw, you have to par cook it by blanching first for better texture. How to blanch: 1. Bring a pot of water up to a boil and add a generous amount of salt. 2. Add the food items, working in batches to not overcrowd the pot, and bring up to a boil, boil until al dente, but fork tender. Usually this takes 1 minute for things like greens, or longer for items like root vegetables. 3. Remove it from the boiling water and shock in an ice bath to stop the cooking process. From there you can cook the veggies however you like! I love grilling them, sautéing them, or saving for later to finish cooking! #cooking #cooking101 #blanching #vegetables

Strain through a coffee filter. Peel the cherry tomatoes. Prick them with a needle. Place them inside a foam siphon. Fill the siphon with the marinade. Charge with gas. Do not shake. Rest for 22 hours in the refrigerator at 4°C. Release the pressure and strain the tomatoes.

Zesting! Super simple but I had never thought about how to do it “better” before I started working in the kitchen. Citrus zest is super versatile so it’s great being able to get all of the zest off of the citrus instead of wasting anything. Another thing to mention is not to apply too much pressure! The moment you hit the pith or the white part underneath the skin, it will be very bitter and not the right zest you want for recipes or garnish. Just some basics I think are great to know and I hope you all enjoyed! merry christmas everyone! I wanted to share how to make cornets since it is a really fun technique that takes a bit of setup, but is relatively simple once you understand the entire process. this is the first station I worked at my current restaurant Per Se and is the first bite most people see eating at either of Thomas Keller’s 3 Star restaurants The French Laundry or Per Se! (all recipes below). Some details I couldn’t fit in the video are that the batter must not be kept too hot or cold, otherwise the butter in the batter will break creating a cornet that is oily and crumbles easily. when baking the batter in the 500 degree oven it should barely have browned edges, it should be cooked just before pretty much any color begins to form. it is really important to tap the end of the cornet down otherwise a hole will form when baked and any fillings will seep out. the classic filling for the cornet is whipped creme fraiche mixed with red onion hacher, and a topping or salmon tartare made with ground salmon, ground smoked salmon, agrumata lemon oil, chives, and salt. hope you all enjoyed this video, it is always fun recreating things from work and as always feel free to comment below with any questions message me directly! happy holidays everyone, I truly appreciate you all so much :D cornet batter -yields 200 cornets- (i made 1/4 recipe for this video) 400g ap flour 128g sugar 28g salt 420g egg white (clean no yolk) 912g tempered butter (soft no lumps) red onion creme fraiche (stand mixer + whip attachment) 5g red onion hacher (extremely fine mince, rinsed) 400g creme fraiche 14g ultra-tex salmon tartare 350g ground salmon 150g smoked salmon 10g chives (finely sliced) 10g lemon oil salt TT #reels #culinary #culinaryarts #cook #cooking #food #michelin #learn #skill #technique #tutorial #cornet #thomaskeller #thefrenchlaundry #perse #teach #tips

Better than takeout It’s still @sumocitrus season and what better way to celebrate than turning these beauties into orange chicken. My new fave recipe btw -Chicken chicken breast/thigh - 2 lbs Eggs - 2 Baking soda - 2 tsp Cornstarch - 2 cups Water - 3/4 cup Avocado oil - 2 tbsp -Sauce Dry chili - 10 Garlic - 10 cloves minced Orange zest - 1/3 cup Orange juice - 2 cups Ketchup - 60g Oyster sauce - 3 tbsp Light soy sauce - 2 tbsp White vinegar - 1/4 cup Sugar - 100g Avocado oil - 2-3 tbsp Neutral oil for deep frying -Cornstarch slurry Cornstarch - 2 tbsp Water- enough to dissolve -prepare chicken. Cut into 1-2 inch cubes, and place into mixing bowl. Add the eggs and mix. Then add cornstarch, baking soda, water, and oil, and mix until we’ll combined. Refrigerate for at least 30 mins. -get a large pot with neutral oil to 400F. Add the chicken one at a time in batches and fry for a minute, should start floating. Once fried let rest 10 mins. -increase oil temp to 450F, and fry again in batches. This time for 40-50 seconds, getting golden. Set aside -make the sauce. Get a pan on medium heat, add oil. Once shimmering, add chilis and garlic. Cook for 30 seconds, making sure not to burn. Add your orange juice. Then add ketchup, oyster sauce, and soy sauce. Bring to a simmer and reduce about a quarter of its volume. Then mix in cornstarch slurry, and cook about 2-3 mins, should get gloopy. Next add the sugar and vinegar, and it should become a nice velvety texture. Throw in your chicken and toss to combine. Serve immediately, garnish with sesame seeds and eat with rice.
