Important Tips -Whisk the egg whites until they become SOFT & FOAMY. - The correct oven temperature is important so that it expands, bakes perfectly & doesn't come out flat. Temperatures range 150°-160°C (may vary). - When mixing egg white mixture into another mixture, the dough kneading technique involves folding/mixing to prevent the dough from going flat. Chocolate Vanilla Castella Cake Recipe Via @cookingwithhel A 16x16x7cm baking tray is lined with parchment paper. Ingredients: 70 ml / ¼ cup + 2 teaspoons full-fat milk oil 50ml / ¼ cup less 2 teaspoons low protein flour 60g / ½ cup 4 egg yolks vanilla 1 pack cocoa 10 gr / 4 teaspoons Ingredients for egg whites: 4 egg whites salt with a teaspoon lemon / lemon juice 1 teaspoon sugar 70gr / ¼ cup + ⅛ cup chocolate chip for topping Method: -Mix the milk, vegetable oil, and flour (after sifting), and mix well with a whisk. Add the egg yolks one by one. Add it one by one and mix well - Divide into 2 parts, add one part cocoa powder and vanilla. Mix well. put aside - Mix all egg white ingredients except the sugar, whisk until frothy, then gradually add the sugar, until smooth. Whip with a mixer until it reaches a smooth consistency. - Divide the egg whites in half, add one to the chocolate mixture and the other to the vanilla mixture. Mix until Mix/fold back with a spatula - Pour the chocolate mixture into mold, then pour in the vanilla mixture (use a plastic triangle to ensure the edges are smooth when pouring vanilla mixture), create a tornado motif around the edges, and then decorate with chocolate pieces. Cover/wrap the baking tray tightly with aluminum foil to prevent water from seeping through, and bake in a bain-marie at 150-160 degrees Celsius for 75 minutes. oven should be preheated. 👩🏼‍🍳BACK TO BASICS: Idiot-Proof Omelet. This is my go-to method for a fuss-free and delicious omelet#. I typically beat 3 eggs with a little kosher salt (I don’t add milk/cream or water, but you do you!) and cook my omelet in a 10-inch skillet. __ 1️⃣ Preheat a nonstick skillet over medium heat. 2️⃣ Reduce the heat to medium-low and add a little butter for flavor and added nonstick assurance. Once the butter is melted and frothy, reduce the heat to low and pour in beaten eggs. Immediately start pulling the eggs away from the sides of the pan toward the center with your spatula. With each pull, tilt the pan toward the hole created to allow the uncooked eggs to flow into the holes created. Keep doing this (you can make smaller and smaller pulls and tilts as the eggs start to set) until there’s no more runny egg and the bottom of the omelet is just set. This process should only take about 30 seconds, max. (The top of the omelet will still look very wet at this point.) 3️⃣ Reduce the heat to low and cover the pan with a lid for 30-60 seconds to steam the eggs and help them set but remain soft. Be careful not to overdo it here! You want the eggs to be just set, not dry and rubbery. (With that said, if you prefer a more well-done omelet, you’ll need another minute or two with the lid on.) Add fillings to one half of the omelet, then fold the empty half over the filling to close. 4️⃣ Place a plate on top of the pan, then invert the pan so that the omelet falls cleanly onto the plate. #omelet #cookingtips #learntocook #cookingtutorial

Green Beans & Beef Stew (Lubiya bi Lahme) Recipe: 👇🏻 Ingredients: ▪️Fresh or Frozen Green Beans. (If using fresh make sure it’s trimmed and washed). ▪️Olive Oil ▪️2 small Onions or 1 Large, diced ▪️3 Cloves of Garlic, minced ▪️Fresh Cilantro, chopped ▪️1 LB. Chuck Roast Beef or Stew Beef, chunks ▪️1 TBS. Tomato Paste ▪️1 Cup Tomato Sauce ▪️1 Cup Diced Tomatoes (canned or fresh) ▪️3-4 C. Beef Broth/Vegetable Broth or Water ▪️1 tsp. Salt (+ more if needed) ▪️1 tsp. Black Pepper ▪️1 tsp. All Spice ▪️1/4 tsp. Cumin ▪️1/4 tsp. Ceylon Cinnamon ▪️Juice of 1 Lemon 1. Heat up a generous amount of olive oil in a pot on medium heat. Add diced onions. Sauté until onions are golden and begin to caramelize. 2. Turn down the heat to low and add the minced garlic. Sauté for 1-2 mins, or until garlic is fragrant. 3. Add chopped fresh cilantro. Sauté an additional minute. 4. Add the beef chunks and seasonings. Cook until beef is no longer pink. (Add more olive oil if needed). 5. Add tomato paste, tomato sauce, diced tomatoes, and broth/water. Mix to combine. Re-season with salt if needed. 6. Bring to a boil. Simmer for 30 mins. 7. Add the green beans. Cover the pot and simmer again for another 30 minutes. 7. Add a fresh squeeze of lemon juice. 8. Serve with Lebanese vermicelli rice (recipe is below) + garnish with fresh cilantro and a dusting of cayenne pepper for an extra kick. For the rice: 1. Heat up olive oil and add vermicelli noodles. Sauté until noodles are a deep golden brown. 2. Add washed rice, 2 tbs of butter, & salt + black pepper. Mix and toast for a few minutes. 3. Add water, (however many cups the rice you’re using requires). Bring to a boil. Cover and simmer until all the liquid is absorbed. 4. Fluff with a fork. Slice the potatoes very thinly. 2. In a pot, add the milk, heavy cream, garlic cloves, nutmeg, salt, pepper, and oregano. Bring it gently to a simmer. 3. Add a portion of the sliced potatoes to the cream mixture and cook for 5-6 minutes, stirring gently. 4. Grease your baking dish if needed. Transfer the first batch of potatoes into the dish and sprinkle with Parmesan and grated cheese. 5. Add the next batch of potatoes to the cream mixture, cook another 5-6 minutes, and layer them again with cheese. 6. Repeat until all potatoes are used. 7. Pour the remaining cream mixture over the last layer of potatoes and finish with a layer of cheese. 8. Cover the dish with foil or baking paper and bake at 200°C for 40 minutes. 9. Remove the cover during the last 15 minutes to let the cheese become golden and crispy. It’s one of those recipes that’s guaranteed to please both vegans and omnivores, and yes, even tofu skeptics. It’s doable on a weeknight but also great for when you have guests over that you want to impress. Serve it over rice, or noodles if you prefer, and you have yourself a mind blowing dinner. INGREDIENTS - TOFU ▪️1 block extra firm tofu (ideally, previously frozen & thawed - makes it chewier & crispier) ▪️½ tsp kosher salt ▪️½ tsp white pepper ▪️½ tsp garlic powder ▪️Heaping 1/4 tsp Chinese five spice powder ▪️3 TBSP cornstarch or arrowroot powder ▪️High-heat oil for pan-frying INGREDIENTS - STIR FRY ▫️2- inch ginger, finely chopped ▫️4 garlic cloves, chopped ▫️ ~ 1 pound vegetables of choice ▫️Cornstarch slurry ▫️For finishing: toasted sesame seeds, toasted sesame oil, big handful of cilantro or scallion greens INGREDIENTS - SAUCE ▪️1 ½ TBSP soy sauce  ▪️1 ½ TBSP rice vinegar ▪️2 TBSP hoisin sauce ▪️2 TBSP Shaoxing wine (Chinese cooking wine) (see blog post for substitutes) ▪️1 TBSP brown sugar  ▪️1 to 2 TBSP chili sauce ▪️3 TBSP veggie broth or water A wok makes for the best stir fry! Some wok tips: 1️⃣ Heat up the wok dry until you see light wisps of smoke. Then add your oil (it’ll heat up quickly). This method prevents the food from sticking. 2️⃣ The food cooks quickly!
