GECHEESE AND PEAS TOASTIE

My good friend of many years Mackenzie Crook (who you’ll you’ll have seen in so many things from The Office to Detectorists to Worzel Gummidge) shares his go-to hard-times toasted sandwich, and I add a herb and another state of pea to the mix. Filmed on a snowy day on the South Downs with cameraperson’s fingers gradually getting more and more numb. Fret not, it was all worth it as we hunkered down for a van-based wrap party with a second post-filming sandwich.
INGREDIENTS:
slices of sourdough
slices of a decent strong cheddar
tin mushy peas
handful frozen peas
HP sauce
a few leaves of fresh mint
butter
METHOD:
Fill the sandwich with the cheese, peas (both types), mint, a squirt of sauce and a sprinkling of pepper. Butter the outside generously and carefully place in a frying pan over a medium heat. Put pressure on top either with another pan, or a board with some tins of beans balanced on top. When crisp and golden flip and cook the other side.
