Disclaimer besties - My mum can make this in 10 mins because she is an Indian mum, for us non-Indian mums it will probably be about 15 mins. But never the less it is so simple to make and I regularly make this when I cant be bothered to go out and get ingredients and especially when I’m missing my mum’s food. More recipes with my mum to come, let me know what you want to learn from her!    250g Red Lentils 300g Tinned Chopped Tomatoes 8 Garlic Cloves  8 Cm Ginger 1 Tsp Cumin Seeds 1/2 Tsp Turmeric  1 Tsp Cumin Powder 2 Tsp Chilli Powder 1 Tsp Coriander Powder 3 Green Chillis Small Handful Coriander  2 Tbsp Ghee 3 Sprigs Curry Leaves (Optional but highly recommended)    Wash the red lentils in a large pan at least 3 times in VERY WARM water until the water comes out clear, the water must be warm, this helps it cook faster. Add 750ml of warm water into the pan and boil high for 7 minutes  Blend the chopped tomatoes, half the ginger and 4 cloves of garlic in a hand blender.  In a large pan pour two large glugs of vegetable oil and add the cumin seeds. Wait for them to start dancing around in the pan, then carefully add in the blended tomatoes.  Add in the turmeric, cumin powder, coriander powder, chilli powder and 2 tsp salt. Cook on a medium heat for at least 7 minutes, or until the dhal is cooked.  Meanwhile thinly slice 4 cloves of garlic, half the green chilli, finely chop the coriander and chop the remaining ginger into matchsticks.  To check if the dhal is cooked, press a few grains between your fingers to feel if they are tender. Add the cooked dhal with the cooking liquid into the curried tomatoes give it a good mix. Top up with 150ml more water to reach your desired consistency.  Taste for seasoning and stir in 3/4 of the coriander.  Heat up 2 tbsp oil and ghee in a small pan and gently cook the garlic until golden. Add in the chillies cook for 15 secs, then add the curry leaves. Cook these until they are bright green (about 10 secs) and then immediately pour over the dhal. Pop a lid on and let the flavours infuse into the dhal until you are ready to eat.   Finish with the remaining ginger and coriander and serve with rice. #dal #dhal

My Go-To Dal, i’ve had dal every week this month and I have zero regrets. Ingredients 1/2 cup split peas 1/4 cup red lentils Thumb of ginger 1 tsp cumin seeds 1 tsp tumeric 1 tsp coriander seeds (crushed in pestle) 2 cloves, grounded 1 red onion, chopped, 1 green chilli, chopped 2 medium tomatoes 1/2 tsp coriander 1/2 tsp garam masala 1/4 tsp chilli 1/2 tsp fenugreek methi curry leaves Salt 1 thumb ginger 4 cloves of garlic roast pumpkin reserve some for topping Tempering 1 tsp vegan butter 1 tsp cumin seeds 1/2 tsp chilli powder Method Wash lentils and split peas until water is clear. Add to a deep pan, cover with water (roughly double the amount). Add salt and turmeric and cook until completely soft and smooth. This takes around 15 mins in a digital pressure cooker or up to 1 hour on the stove. To a pan, heat oil and add cumin seeds - they should sizzle. Then add onions, garlic, ginger, green chilli. Add spices next followed by tomatoes and cook down for a few minutes until soft. Then mix in cooked split peas and lentil. Add more water if needed to loosen lentils to get a looser consistency perfect for scooping with roti. Serve with chilli oil, coriander and fresh squeeze lemon. #dal #dhal #plantbasedrecipes #plantbased #veganfoodshare #veganuk #veganrecipes #plantbasedrecipes

It’s on a regular rotation in our home and you can serve yours with Indian bread or rice ✌️ Serves 4 🌿 vegetable oil 🌿 1 onion, peeled + finely chopped 🌿 320g (11.3oz) red lentils, rinsed 🌿 2 tsp turmeric 🌿 2 tsp ground coriander 🌿 salt + pepper 🌿 8 garlic cloves, peeled + sliced 🌿 8 green chillies 🌿 2 tsp cumin seeds 🌿 1/2 tsp fennel seeds 🌿 2 tsp black mustard seeds 🌿 1 thumb of fresh ginger, peeled + chopped 🌿 1 small handful of fresh coriander (optional) 🌿 cooked rice or Indian bread, to serve (optional) 1️⃣ Heat a little oil in a big pot on a medium heat. Once hot add the onion and fry for 8 minutes or until soft. 2️⃣ Next, add the rinsed red lentils to the pot along with 1.5 litres (50fl.oz) of water, the turmeric, coriander and 1 teaspoon of salt. 3️⃣ Stir, then bring to the boil. Next, reduce the heat to a simmer and cook with the lid on for 15 minutes. 4️⃣ Remove the lid, reduce the heat and leave to cook on a low heat for the next few minutes while you make the tarka. 5️⃣ Heat 6 tablespoons of oil in a frying pan on a medium-high heat. Once hot, add the garlic and fry for 1-2 minutes. 6️⃣ Meanwhile, trim a tiny bit off the ends of the chillies to allow the heat to escape into the dhal. 7️⃣Next add the chillies to the oil along with the cumin seeds, fennel seeds, mustard seeds and ginger and fry for 1-2 minutes. 8️⃣ Working quickly, add the oil mixture to the pot with the lentils. Stir to combine then simmer for 5 minutes or longer if you prefer your dhal to be a thicker consistency. Serve with chopped fresh coriander (optional). Big love, Roxy + Ben 💚

Vegetable Dhal. Dhal is one of my comfort foods. Those creamy lentils with fragrant spices just remind me of Sri-Lanka, warm you from the inside and it’s delicious served on its own or as a side dish. Top fact. I cooked this recipe live at the BBC Food Show one year! That was a lot of fun. We served this with poppadums and rice for the kids. Then added to it for an adult meal later. - 1 tbsp vegetable oil in a pan with 1 tsp mustard seeds, cumin seeds, fenugreek, 1tsp ground coriander and around 15 curry leaves. Heat until the mustard seeds pop. - 1 diced onion and 2 crushed garlic cloves. Sauté. - Add 4 handfuls of red lentils, 1 tin coconut milk, 1/2 tin chopped tomatoes and your choice of veggies. - Simmer for 30 mins until lentils are cooked. Add extra water if you want a thinner consistency. Want the recipes for the other curries?
