MAThere’s more to corn than meets the ear! 🌽
Less than 10% of corn grown in the U.S. is actually eaten by humans! And an even smaller percentage of that corn is sweet corn. So, let’s talk about the differences between sweet corn and field corn.
Sweet corn is a much smaller plant in stature than field corn. The plants are rarely over head height on me, and I’m 5’6” tall. Most field corn today is much taller, although new hybrids are being developed for short stature corn so that could change in the future. The leaves on field corn are wider and overall field corn plants look more robust when compared side by side.
Sweet corn is harvested in the milk stage, just after pollination when the silks start turning brown. Field corn is harvested much later after the plant has started dying and the grain on the cob is dented.
The ultimate way to tell the difference is to take a bite! You will be sure to know if a cob is sweet or not by the taste.

MECorn (maize) grows through several natural stages, starting from a small seed planted in soil. First, the seed absorbs water and begins germination, sending out a root downward and a shoot upward. Within days, the first leaves appear and the plant starts using sunlight to grow. This early period is called the vegetative stage, when the stem becomes stronger and new leaves develop continuously. 
As the plant gets taller, it enters the flowering stage. A tassel forms at the top (male part), and silks grow from the sides of the plant (female part). Pollen from the tassel falls onto the silks, which allows fertilization. Each silk is connected to a future kernel on the cob, so proper pollination is essential for full corn growth. 
After pollination, kernels begin forming on the cob. They pass through stages like blister, milk, dough, and dent as they fill with nutrients and starch. Finally, the plant reaches maturity when the kernels harden and the leaves dry, making the corn ready for harvest. 
This whole process—from planting to harvest—usually takes a few months, depending on climate and care like water, sunlight, and soil nutrients.

EPThough corn is one of the most grown crops in the USA, few people know how it ACTUALLY grows! When corn gets to a certain size, it produces tassels, the male part of the plant. These are at the top of the corn stalk.
Below, little ears of corn start to form and silks, the female part, peek out of the top.
The tassels and silks work together in a fascinating dance to create perfect ears of corn. The tassels are rustled by wind, releasing grains of pollen that - with any luck - land on the silks and travel down them, into the ear to pollinate an individual kernel of corn.
So if you've ever seen a weird looking ear with missing kernels, you know it's a pollination issue! This is why corn is planted in blocks, to maximize the chance that each silk is hit with pollen.
