Shaping a boule in under a minute 👇 I start with a double clasp to anchor the dough. Then I go into my push and pull — that candy cane motion. It’s one continuous movement: Push the dough away, curve it back toward you, and let the surface tighten naturally. I’m not forcing it… I’m guiding it. And here’s something that surprises people — I don’t flour my surface. I lightly spray my counter and my hands with water instead. The slight moisture keeps the dough from sticking, but still gives enough grip to build real surface tension. If you flour, the dough just slides and you lose that tightening effect. That smooth, tight skin is what helps the loaf hold its shape and gives you that beautiful oven spring later. Once it’s in the banneton, I stitch it for extra structure before cold retard. Shaping takes practice!!! there’s no sugar coating it This is one of those sourdough skills that only gets better by doing. A few things that will save you a lot of frustration Pre-shaping always comes before final shaping. This step builds structure so the dough can actually hold its shape later. Your goal in pre-shape is a gentle round, not a super tight ball. Over-tightening will tear the dough and turn it sticky and hard to handle. If the dough tears or feels out of control, stop. Cover it, let it rest for about 10 minutes, and start again. Gluten needs time to relax. If your dough is very sticky, use water or a light dusting of flour on your hands ,whatever gives you control without drying the dough out. A dough scraper isn’t mandatory, but it makes shaping so much easier and cleaner. When you start seeing air bubbles on the surface, that’s your cue to stop shaping. Cover the dough and let it rest. Bench rest guidelines: • Tighter dough → 30–60 minutes • Slacker dough → 15–20 minutes #sourdough #shaping #bread #bakers #sourdoughbread
