Lamb hand pies/Kerry pies/Dingle pies- they go by many names and are like a meatier pasty. Filled with lamb, veggies, fresh herbs and wrapped in a buttery flaky crust, they’re hearty and delicious. Long live Irish culture and cuisine!🍀
Recipe!
For Filling:
•2lbs ground lamb meat- beef can be subbed
•1 small yellow or sweet onion, diced
•4 cloves garlic, diced
•1 cup of frozen peas
•1/4 cup freshly chopped parsley
•2 teaspoons fresh rosemary, finely chopped
•1 teaspoon fresh sage, finely chopped
•1 teaspoon fresh thyme, finely chopped
•4 tbs evoo
•1 tsp fine sea salt
•1 tbs ground cumin
•1 tsp garlic powder
•1/4 tsp finely ground black pepper
•1/4 tsp pumpkin pie spice- or a small pinch each of nutmeg, cinnamon, clove and ginger.
For Pie Crust:
•4 cups all purpose flour, plus more to flour work surface
•1 tbs fine sea or pink salt
•1 and 2/3 cup high quality butter, cold chopped into 1/4 inch pieces
•4 eggs, divided
•3-5 tablespoons ice cold water, as needed
