UM❄ Quand les températures baissent, rien de plus réconfortant qu’un bon yosénabé ! Ce grand classique japonais se prépare directement à table : un bouillon fumant, des légumes colorés, de la viande, du poisson et des fruits de mer… chacun pioche et savoure à son rythme 🍲✨
🧑🍳 Notre recette pour partager un yosénabé à 4 :
🥕 Ingrédients :
1/4 de chou chinois
1 poireau
1 carotte
2 cuisses de poulet désossées
2 pavés de saumon
4 crevettes entières
1 bloc de tofu
Champignons (shiitake, enoki, shimeji…) selon vos goûts
100 g de nouilles de konjac
🥣 Pour le bouillon et l’assaisonnement
1 L d’eau
10 g de kombu
20 g de flocons de bonite séchée (katsuobushi)
4 c. à soupe de sauce soja
4 c. à soupe de mirin
2/3 c. à café de sel
🧡 Préparation
1⃣ Tremper le kombu 30 min dans de l’eau froide.
2⃣ Commencer la cuisson de l’eau et du kombu puis retirer le kombu juste avant ébullition.
3️⃣ Ajouter le katsuobushi, porter à nouveau à ébullition, puis retirer du feu et filtrer.
4️⃣ Couper tous les ingrédients en morceaux faciles à manger.
5️⃣ Rincer les nouilles de konjac.
6️⃣ Verser le bouillon filtré dans une cocotte, ajouter le sel, la sauce soja et le mirin, puis porter à légère ébullition.
7️⃣ Ajouter le poulet, le saumon et les crevettes.
8️⃣ Incorporer ensuite les légumes crus.
9️⃣ Terminer par le tofu et les nouilles de konjac, et laisser mijoter jusqu’à cuisson complète.
🔟 Servir directement à table, bien chaud 🔥
💡 Astuce :
Au Japon quand il ne reste plus que le bouillon, on y ajoute du riz et un œuf pour faire un zosui (une soupe de riz), ou des udon, pour profiter du bouillon jusqu’à la dernière goutte 🍚🍜

Chicken Dashi
1 1/2 pounds chicken wings
1 teaspoon salt
2 green onions (green parts) sliced into thirds
1 knob ginger (no need to peel) chopped into 3-4 pieces
6 black peppercorns
5 cups water
Season chicken with salt and let marinate for 1 hour.
Pat chicken dry and combine with rest of ingredients in the Donabe. Cover and set over medium high heat. Once the broth is boiling, turn down the heat to simmer. Skim as necessary. Cover and simmer for 20 minutes. Turn off the heat and let it rest for 1 hour. Transfer chicken wings to a bowl and save for another use. Strain broth through a fine sieve. After, straining you can season with salt & pepper. Enjoy! You can use for rice, soups & stews, add in the chicken used to make it, or sip on its own!

Juicy Chicken & Rice
8 chicken wings (I trimmed off the wings & deboned the flats but not absolutely necessary)
2 tablespoons sake
3 tablespoons soy sauce
1 tablespoon brown sugar
1 clove garlic, grated
1 1/2 cups short grain white rice
1 1/4 cups chicken dashi (can sub chicken broth)
1 tablespoon peeled and julienned ginger
Sesame oil, for topping
Thinly sliced green onion, for topping
Mix the soy sauce, sake, brown sugar, and grated garlic in a medium bowl and add the chicken. Toss to coat, cover and let marinate in the fridge for 3-24 hours.
Remove the chicken from the marinade and set aside. Save the marinade liquid.
In the donabe, combine the rice with the dashi (broth), and the reserved marinade. Cover and let the rice soak for 20 minutes. Spread the ginger over the rice and place the chicken on top in one layer. Cover with the lid and let cook over medium heat for 13-15 minutes. Turn off the heat and let it sit, covered for 20 minutes.
Uncover, transfer the chicken to a plate and fluff the rice with a fork. Return the chicken to the pan drizzle with sesame oil and top with sliced green onions. Enjoy!
