Ingredients
Donuts
- 435g bread flour (3 cups + 2 tbsp)
- 68g granulated sugar (1/3 cup)
- 185g whole milk (3/4 cup)
- 60g unsalted butter, softened (4 tbsp)
- 7g active dry yeast (2 1/4 tsp)
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 tsp salt
- Canola oil for frying
Filling/topping
- 7.7 oz Nutella
- Granulated sugar (to cover donuts)
Instructions
- In a bowl, combine warm milk and sugar. Sprinkle yeast over the top, stir lightly, and let sit 5–10 minutes until foamy.
- Add eggs, sugar, vanilla extract and mix again until well combined.
- Add flour to mixture. Mix until a rough dough forms.
- Begin kneading. Once the dough starts to come together, gradually add the softened butter (1 tbsp at a time), kneading until fully incorporated before adding more.
- Continue kneading 8–10 minutes by hand or 5–6 minutes in a stand mixer, until smooth, elastic, and slightly tacky.
- Transfer dough to a lightly greased bowl, cover, and let rise 1–1½ hours, or until doubled in size.
- Punch down dough and separate into 12 balls (weighing 65g each)
- Place onto parchment lined tray cover loosely and let rise 30–40 minutes, until puffy.
- In a large skillet heat oil to 325–335°F (aim for 330°F)
- Fry 2–3 minutes per side
- Flip every 30–45 seconds for even color
- Fry until golden brown
- Remove donuts from oil place onto a wire rack
- Toss in sugar until fully coated
- Poke a hole in the top of each donut
- Pipe in Nutella filling until slightly heavy
- Serve & enjoy!

CIYeast mixture:
1/2 cup whole milk (warm)
1/2 cup of water (warm)
1/2 tbsp sugar
1 tbsp active dry yeast @redstaryeast
Instructions: Whisk all of your ingredients and allow to sit for 10 mins covered.
Dough:
Yeast mixture
545g bread flour (approx. 4 cups fluffed & leveled ) @kingarthurbaking
105g sugar (1/2 cup)
3 eggs
1 tsp vanilla bean paste
Grated nutmeg
1/2 tsp salt (use 1 tsp if using unsalted butter) @trulyfamilyfarms
5 tbsp melted salted butter
Instructions: Knead ingredients on ‘mix’ for 2 mins, then increase speed to 4 and allow to knead 25 mins. If kneading by hand, you may need to knead 30-35 mins to reach optimal gluten development.
Shape dough into ball, cover and allow to rest in warm area for 1-1.5 hours (mine took 1 hour and 10 mins to double). Once doubled, divide dough into 12 equal pieces (approx. 85g/ea) shape into balls, cover and allow to rest 10 mins. Once rested flour both sides of dough balls, flatten with your palms, make a hole in the center, and stretch the middle out. Cover again and allow to rest 35-40 mins or until doubled. Fry each side at 350 for 2 mins. Make sure to lower the heat once it reaches 350 to avoid burning donuts before the inside cooks. Strain before glazing.
Vanilla bean glaze:
3 cups powdered sugar
Pinch of salt
1/4 cup whole milk
3 tbsp melted salted butter
1 tbsp vanilla bean paste
Instructions: Combine ingredients and whisk well until smooth. Glaze donuts immediately to ensure the butter in the glaze doesn’t start to solidify. This will give you that classic donut shop glaze!
