NUULTIMATE MICRONUTRIENT RICH MEAL PREP!👩🍳🥒 🫑🍗
Eating the rainbow doesn’t just look good, it also means you are getting in a much wider range of health-boosting nutrients too! 🫶🏼
Air-Fryer Roasted Green Veggies:
1. Chop up 2 medium broccoli heads, then place in a bowl.
2. Mix in a generous amount of olive oil, salt and pepper, 200g chopped asparagus heads, a large handful of chopped fresh parsley, 1 chopped courgette, half a white onion, and the juice of half a lemon.
3. Cook in the air fryer at 200 degrees for around 10 mins.
Air-Fryer Smokey Cauliflower:
1. Chop up 2 cauliflower heads and place in a large bowl.
2. Mix in a generous amount of olive oil, salt and pepper, 1.5 tbsp smoked paprika powder, 1 tsp onion granules, 1 tsp garlic powder and then place into an air fryer and cook at 200 degrees celsius for around 8-10 mins. Garnish with some chopped parsley
Greek Salad with tzatziki inspired dressing:
1. Chop up 3 long red Romano peppers, 1 whole cucumber, a large handful fresh dill leaves, 1/2 a red onion and 400g cherry tomatoes and then place in a large bowl and mix well.
2. Stir in 4 tbsp olive oil, some salt, 1 tsp garlic powder, juice from half a lemon, and 3 tbsp greek yoghurt. Mix well.
Quinoa Bean Salad:
1. Microwave 2 bags of quinoa for 2 mins each, then add these both to a large bowl.
2. Add in a drained tin of cannellini beans, drained tin of kidney or black beans, and drained tin of chickpeas, as well as some chopped parsley, one chopped red pepper and a few tbsp of French dressing. Mix well.
Satay Chicken pieces:
1. Diced up 500g of chicken thighs into large chunks
2. Mix in 3 tbsp soya sauce, 2 tbsp honey, juice from half a lime and 3 tbsp runny peanut butter. Mix well and coat the chicken evenly.
3. Cook in an airfryer at 180 degrees clicks for around 15 mins or until cooked evenly through, turning the pieces of chicken over half way through.
Smoky tofu pieces:
1. Chop up 225g of smoky tofu into bitesize pieces. Dust over a teaspoon of smoked paprika, a drizzle of oil and then place into the air fryer and cook at 200 degrees celsius for around 10 mins, shaking them half way through.

EMCheeseburger Pizza 🍔 🍕

This recipe makes 3 large pizzas, if you want to make less reduce the topping quantities and for the spare dough don’t waste it, make flat breads for the next day!
For the base:
1 cup (240g) 0% Greek Yoghurt
1.5 cups (255g) Self-Raising Flour
Toppings:
For the “burger”:
250g 5% Fat Lean Beef Mince
1 Tsp Smoked Paprika
½ Tsp Garlic Powder
½ Tsp Onion Granules
10ml Worcester Sauce (forgot to mention this in the video)
1 Medium onion chopped and sautéed
Other pizza toppings:
75g Eatlean Protein Grated Cheese
90g Light Mozzarella
120g chopped Burger Gherkins
150g Passata
1 Tsp Oregano
3x 15g Servings M&S Food Posh Dog Mustard
3x Servings Heinz American Style Burger Sauce
Cook the burger ingredients in a pan until the beef is cooked through. Chop and sauté the onion.
For the pizza base mix the flour and Greek yogurt. It will seem too dry. Keep going, get your hands in there, a dough will form! Kneed out on a well floured surface for a few mins. Portion up and then roll into large bases using a well floured rolling pin. Pinch in the edges for a crisper crust.
Cook in a dry pan for a few mins each side.
Add your toppings and cook at 180 for about 10 mins for the cheese to melt and the crust to get even crispier!

This is truly life-threatening and #EAS was definitely in place! #Wales/Cymru and southwestern #England are very likely to experience significant damage to the infrastructure due to sustained gale-to-storm force wind gusts driven by enhanced pressure gradient as the high-pressure system strengthens in the Atlantic and low-pressure system ebbs to the east. The @metoffice (Met Office) and the UK Government have already issued numerous warnings and recently an EAS alert for the red warning area zone. Nationwide, a very windy day - widely 50-60 mph gusts are likely with many disruptions. Please take extra care! #StormDarragh
