Gasp, I know!Why do I always feel guilty when I don’t cook for holidays? I love to teach you all how to simplify and make things easier, but if I opt to go out myself it’s like I’m being “caught” red handed. I’ve actually been embarrassed running into people at restaurants before, as if I should cook every meal of every day of the year. 🙈 Don’t worry, I know I’m mental. I have a therapist for that! Hippity-hoppity fun with Beet-Dyed Deviled Eggs 🐰🥚Naturally vibrant and delicious — perfect for spring! 🌸🩷⁠ ⁠ INGREDIENTS⁠ For beet juice⁠ • 1 cup water⁠ • 1 cup apple cider vinegar⁠ • 1 tsp salt⁠ • 2 large beets, shredded⁠ For eggs⁠ • 6 eggs⁠ • ⅛ cup greek yogurt⁠ • ⅛ cup mayo⁠ • ½ tbsp Dijon mustard⁠ • 5-6 cornichons (depending on size), minced⁠ • sea salt to taste⁠ • fresh chives, minced for garnish⁠ ⁠ DIRECTIONS⁠, makes 12 deviled eggs⁠ • Peel beets. Prepare a pot with water, apple cider vinegar and salt. Shred or slice beets into this mixture, making sure they’re covered with liquid. Bring to a boil over high heat, then simmer for about 5 minutes. Let cool. Drain the beet juice from the shredded beets. Feel free to reserve beets for another use, like adding to a salad. ⁠ • Add eggs to a pot then cover with water. Bring to a boil over high heat. Once boiling, put on a lid and cook for 10 minutes. You can turn down the heat a bit so it doesn’t boil over. Meanwhile, prepare a bowl of water with ice. When done, drain the eggs then place them in the ice water bath. Let cool. When cooled, peel eggs. ⁠ • Place the peeled eggs into the juice for at least 3 hours, or overnight in the fridge for a more vibrant color.⁠ • Remove dyed eggs from juice onto a paper towel. Slice eggs in half then scoop out yolk into a bowl. Set white aside. Mix together yolk, greek yogurt, mayo, dijon, minced cornichons and salt. Fill each egg white with a scoop of the mixture. You can use a piping bag or 2 spoons for this. Feel free to garnish with chives or other herbs of your choice. ⁠ ⁠

I simplified this creamy, hearty comfort food recipe to cut way down on the time, dirty dishes and ingredients. ⁠ ⁠ In doing so, I nixed the typical flour as a thickener. This turned out a decadent scalloped potato recipe that happens to be totally gluten free.⁠ ⁠⁠ My secret is to simmer the potatoes in the cream on the stove for a bit before baking. This does two things: ⁠ ⁠ 1. Partially cooks the potatoes to cut down the oven cooking time by more than HALF.⁠ ⁠ 2. Kick-starts thickening up the cream, eliminating the need for a flour-butter roux. ⁠ ⁠ A generous handful of grated parmesan and starch released from the potatoes thickens the sauce even more. ⁠ ⁠ You’ll love how this simple one-pan recipe results in a bubbling, golden dish of perfect potatoes in silky cream sauce.⁠ ⁠ 👉🏻Creamy Potato Gratin Ingredients: ⁠ 3 lbs yukon gold or red potatoes, peeled and sliced ¼” thick⁠ ½ cup thinly-sliced onion (¼ of a large onion)⁠ 3 tsp kosher salt⁠ 3 cups heavy cream (see article notes for substitutions)⁠ ¼ tsp black pepper⁠ ⅛ tsp ground nutmeg⁠ 1 tbsp unsalted butter⁠ 6 fresh sage leaves (optional)⁠ ⅓ cup finely-grated parmigiano reggiano (or parmesan cheese)⁠ ⁠ Leave any comment with the word “Recipe” and I’ll send it right to your DMs, or you can google “Foodess Scallopped Potatoes” to find it on the web 🔎 ⁠ I love to infuse the cream sauce with fragrant sage, but you could swap in rosemary, or just leave it out.
