Today’s recipe: Lemon Possets are bright, creamy, and perfectly refreshing. The kind of simple dessert that feels a little extra special with every spoonful.
Ingredients:
- 8 lemons (halved and hollowed)
- 2 cups heavy cream
- 3/4 cup granulated sugar
- Lemon zest
- 1 teaspoon Amoretti® Vanilla Bean Paste
- 8 tablespoons fresh lemon juice
Directions:
1. In a medium saucepan, combine the heavy cream, sugar, and vanilla bean paste.
2. Bring the mixture to a gentle boil over medium heat, stirring frequently until the sugar dissolves.
3. Let it simmer briefly, then remove from heat.
4. Stir in the fresh lemon juice and a bit of lemon zest.
5. Allow the mixture to cool slightly, then carefully pour into the hollowed lemon halves.
6. Refrigerate for at least 4 hours, or until set.
