My family asks for seconds every single time. 🍝😘 Comment RECIPE and I’ll send it straight to your DMs. One-Pan Beef Tomato Rigatoni Ingredients • 5 tomatoes • 1 large red onion (diced) • 4 garlic cloves (minced) • 1 tbsp tomato paste • 1 lb ground beef • 1 pack rigatoni • 1 handful mozzarella • Olive oil Seasoning • Salt • 1 tsp paprika • ½ tsp black pepper • ½ tsp garlic powder • ½–1 tsp oregano Optional (finish) • Parsley • Parmesan • Olive oil • Salt + pepper ⸻ Steps 1. Pasta Cook in salted water. Save a little pasta water. 2. Base Olive oil → tomatoes (cut side down) → onion → garlic → tomato paste Cover, cook ~5 min. 3. Beef Add beef, press flat. Leave 4–5 min to brown. 4. Sauce Break beef, mash tomatoes. Add all seasoning. 5. Finish Stir in mozzarella. Add splash of pasta water. 6. Combine Add pasta. Toss. 7. Dumb Dinners, Episode 26: Coconut Curry Chicken Bake What you need: 1 can (15 oz) full-fat unsweetened coconut milk 1¾ cups low sodium chicken broth 3 tablespoons red curry paste 4 tablespoons reduced-sodium soy sauce 2 tablespoons creamy peanut butter 2 teaspoons sesame oil 2 teaspoons minced garlic 1 teaspoon minced ginger 1½ lbs boneless skinless chicken thighs, cut into 1½-inch pieces 1½ cups long grain white rice, uncooked 1 cup frozen shelled edamame 4 green onions, sliced, divided 1 lime Chili crisp for serving How to make it: Preheat oven to 375°F and spray a 9x13 baking dish with cooking spray Microwave peanut butter for 10 seconds to soften Pour coconut milk and chicken broth into the dish, add curry paste, soy sauce, peanut butter, sesame oil, garlic, and ginger and whisk until completely smooth Add rice and gently flatten into an even layer Lay chicken on top and press lightly into the sauce Scatter edamame and most of the green onions over everything Cover tightly with foil, pressing edges firmly against all four sides Bake 45-50 minutes until rice has absorbed the liquid and is cooked through Remove foil for the final 5 minutes Squeeze lime over the whole dish, top with reserved green onions and chili crisp, serve straight from the pan #easydinner #easydinners #easydinneridea #dumbdinners #easydinnerrecipes

Sweet, caramelised onions, the ultimate burger sauce, and Mingle’s BBQ seasoning come together for something so much better than a Big Mac! Macros (Serves 4) • 570kcal • 49.3g P • 40.6g C • 22.1g F Ingredients • 8 corn taco tortillas • 500g LEAN minced beef (95%) • 1 pack @mingleseasoning American BBQ seasoning • 8 slices burger cheese • 2 cups lettuce shredded • 3 onions very finely sliced • 2 tsp maple syrup • ¼ cup fresh parsley finely chopped Sauce • ½ cup Greek yoghurt • ¼ cup reduced sugar ketchup • 1 tsp garlic powder • 1 tbsp American mustard • 2 tsp coconut sugar • 2.5 tbsp dill pickle finely diced + 1 tsp pickle juice Note: Please use lean minced beef and very little oil to avoid greasy tacos. Method 1. Caramelise the onions: Heat a drizzle of olive oil in a large frying pan over medium heat. Add the sliced onions, maple syrup and a pinch of salt. Cook for 25 minutes, stirring regularly, until the onions are deeply golden and soft. Add small splashes of water if the pan becomes dry. Set aside. 2. Make the burger sauce: In a small bowl, combine the Greek yoghurt, ketchup, mustard, garlic powder, coconut sugar and diced pickles. Mix well and set aside. 3. Prepare the smash tacos: Divide the mince into 8 equal balls. Place one ball onto each tortilla and press firmly with your hands to spread the meat in a thin layer right to the edges of the tortilla. Sprinkle generously with the BBQ seasoning. 4. Cook the tacos: Heat a large frying pan or griddle over medium-high heat. Place the tacos meat-side down and cook for 2–3 minutes, pressing lightly so the meat browns and crisps. Flip the tacos so the tortilla side is down. Place a slice of cheese on the meat, cover the pan and cook for 1-2 minutes, until the cheese melts and the tortilla is lightly toasted. Repeat with remaining tacos. 5. Assemble: Top each taco with shredded lettuce, caramelised onions, burger sauce and a sprinkle of fresh parsley. Serve immediately.

Preheat oven to 180C. 2. Mix flour and water until smooth. 3. Make 4 cuts around each tortilla. Brush lightly with the flour mixture, then fold and press into cup shapes to secure the edges. 4. Place into a greased baking dish. 5. Heat a large pan over high heat. Cook chicken mince until browned. 6. Add taco seasoning and tomato paste, stir well. 7. Pour in chicken stock and add capsicum. Cook until thick and the liquid has absorbed. 8. Spoon mixture into tortilla cups. 9. Top with mozzarella. 10. Bake for 10-15 minutes until cheese is melted and tortilla edges are crisp. 11. If you’re tired of eating the same boring meals every week, this is exactly why I share Weeknight Staples. Follow me to eat better and spend less. Ingredients • 1 can full-fat coconut milk (13.5 oz) • 2 tbsp red curry paste • 3 garlic cloves, minced • 2 tsp fresh ginger, minced • 3 tbsp soy sauce • 1 tbsp oyster sauce • 1 tbsp peanut butter • 1 tbsp sesame oil • 2 tsp rice vinegar • Juice of 1 lime • 4 cups bok choy, chopped • 15–20 frozen dumplings (pork, chicken, or veggie) • Optional toppings: chili crisp, green onions, sesame seeds, cilantro, lime Instructions 1. Preheat oven to 400°F. 2. In a 9×13 pan, whisk together the coconut milk, curry paste, garlic, ginger, soy sauce, oyster sauce, peanut butter, sesame oil, and rice vinegar. 3. 10 MINUTE PEANUT BUTTER + CHILLI CRISP NOODLES 🤤 if you’ve got 10 minutes to make dinner tonight, but aren’t sure what to cook, this is what you should be eating this evening - speedy peanut butter + chilli crisp noodles 🌶️ when I saw @vegscratchkitchen make these, I knew I had to give them a go. and oh my lord, they did not disappoint - they are RIDICULOUSLY delicious + indulgent 😍 you can find the full recipe on his feed, but as a rough guide: 2 tbsp crunchy peanut butter (I like @manilife_ deep roast) 1 tbsp minced garlic 1 tbsp minced ginger 2 tbsp finely sliced spring onion 2 tbsp finely diced shallot 2 tsp chilli crisp (I like @redpanda.food ) 2 tbsp minced garlic toasted sesame seeds 2 tbsp soy sauce 2 tbsp rice wine vinegar 80ml hot neutral oil (I used sunflower) 2 portions noodles of choice 1 small red chilli, sliced get all your ingredients in a frying pan, then heat your oil. once hot + starting to smoke, pour over the aromatics, whisking well to combine. cook your noodles according to packet instructions, reserving a little noodle cooking liquid. toss the noodles through the sauce, loosening with a little liquid if required. garnish with more spring onion, red chilli + sesame seeds. enjoy! and let me know if you give it a go in the comments 👇 #noodles #easydinner #quickrecipes #easyrecipe

Ingredients For the Roll Ups: 10–12 lasagna noodles 2 cups cooked chicken (rotisserie or leftover; I premade my chicken earlier in the week and seasoned with salt, pepper, garlic powder, onion powder, and paprika) 1 block Boursin cheese 1 cup ricotta cheese 1 egg 1 tsp garlic powder 1 tsp black pepper 1 tsp garlic & herb seasoning Parsley, to taste For the Alfredo Sauce: 1 stick butter 1 tbsp minced garlic 2 cups heavy whipping cream 1¼ cups freshly grated Parmesan cheese 1 tsp salt 1 tsp black pepper Toppings: 2 cups shredded mozzarella Parsley Directions 1. Cook the noodles according to package directions until al dente. Drain and lay flat on parchment paper or foil so they don’t stick. 2. Make the filling: In a bowl, combine Boursin cheese, ricotta, egg, garlic powder, black pepper, garlic & herb seasoning, and parsley. Mix until fully combined. 3. Make the Alfredo sauce: In a skillet or saucepan, melt butter over medium heat. Add minced garlic and cook for 30 seconds until fragrant. Pour in heavy cream and bring to a gentle simmer. Stir in Parmesan cheese, salt, and black pepper until smooth and creamy. 4. Assemble: Spread 1/2 cup Alfredo sauce into the bottom of a greased 9x13 baking dish.
