High Protein Egg Bake I love making egg dishes for dinner. This was delicious! Iโ€™m feeding a big family so I used a dozen eggs. It would be easy to cut this recipe in half though. I ate a leftover piece for lunch today with a little bit of fresh salsa. So good!๐Ÿ‘Œ๐Ÿผ RECIPE - Makes 8 pieces INGREDIENTS: 12 large eggs 1/2 cup cottage cheese 1 small bell pepper, diced 4.5 oz can of diced green chiles 3 alfresco andouille chicken sausage links, sliced 1/2 cup shredded sharp cheddar cheese salt, pepper and garlic powder to taste DIRECTIONS: 1. Preheat oven to 350 degrees F. 2. Crack the eggs into a large mixing bowl and then add in the cottage cheese and seasonings. 3. Whisk until combined. 4. Stir in the diced peppers, green chiles and sliced sausage. 5. Pour into a greased 9x13 baking dish. 6. Top with cheddar cheese. 7. Bake for 30-35 minutes or until no longer jiggly in the center. 8. Cut into 8 pieces. Preheat oven to 375 F. 2. In a blender or food processor, add the eggs, cottage cheese, cheddar cheese, milk, salt, pepper, garlic powder, and onion powder.
