Fermented Mustard! 👇 Add to a wide-mouth pint jar: • 1½ cups mustard seeds (yellow, brown, or any combo) • Fill the jar with filtered water Weigh the seeds + water and add salt equal to 2% of the total weight (total grams × 0.02 = grams of salt) 👉 No scale? This is typically about 3 tsp fine salt for a pint jar. Stir, add an airlock or loose lid, and ferment at room temp for 2 weeks. Drain seeds and reserve the brine. FINISH From here on out, adjust to taste. This part is flexible! Blend seeds with: • 3 tbsp apple cider vinegar • 2-4 tbsp honey or maple syrup • 1 tsp garlic powder • 1 tsp onion powder • 1/4 tsp turmeric • 1/4-1/2+ cup reserved brine or water (Keep it slightly looser than final. It will thicken more once refrigerated.) Pulse with an immersion blender until you reach your desired consistency, adding more brine or water as needed. TASTE & ADJUST More honey → milder More vinegar → tangier More liquid → looser More spice → bolder STORAGE Flavor continues to mellow over time. Store covered in the refrigerator. When I can't garden I ferment, so expect more bubbly sodas! I had to juice a pineapple for my daily green juice, so I used the skins to make a tepache! Skins from 1 pineapple, scrubbed very well Quart size mason jar 1/8 cup raw cane sugar / piloncillo Optional: cinnamon stick, clove, star anise Add skins to a quart sized jar Add sugar and spices Cover with water (skins fully submerged) Cover loosely so air can escape, I used pickle jar lids Ferment 24–72 hours at room temp Fermentation times vary greatly I let mine ferment for about 48 hours before I switched over to my swing top bottles to trap carbonation. You know fermentation is active when you have a steady steam of bubbles from bottom to top, this is when I know its ready to drink or trap the carbonation to then drink. You can drink as is or transfer to bottles to trap the carbonation so you get a really bubbly soda. For it to taste sweeter and more like pineapple, also add pieces of the pineapple to your solution. I did this once and it was amazing, this time I wanted to see what just the skins tasted like. It was good, very unique tang to this one. How to make raw wild fermented soda 🫧 1. Harvest plants from your garden or local farm. They must be organically grown and/ or local to your area so you can capture the native, wild yeast. All plants will have varying amounts of wild yeast while some are very high (grapes, elder, pine). You can also add dried herbs or store bought herbs/ fruits as long as you have locally grown material. 2. Add plants/ fruits into a clean glass jar and macerate— meaning break up, mash, blend, chop… increase the surface area & release the flavors!! 3. Add raw sugar or raw honey. Raw honey also contains wild yeast. I add enough to taste.. approx 1 cup per half gallon. 4. Top with filtered or distilled water— tap water is NOT recommended due to its chlorine content. 5. Leave on the countertop covered with a cloth & stir daily. 6. Once the plant material has risen to the top of the jar & there are a significant amount of bubbles when you stir the contents— first round of fermentation is complete! This could be anywhere from 12-60 hours depending on climate of your kitchen. 7. Strain & pour into jars/ bottles with tight fitting lids. ***CAUTION*** bottles with tall necks are more likely to explode. This is also a good time to taste the soda & add more sugar if you like. 8. Leave on countertop & burp the bottles every day (open & let some of the gas out) until it’s reached a desired amount of carbonation & sweetness. The longer it ferments, the more the yeast will consume the sugar and the “drier” the soda will be. This could be anywhere from 12-60 hours depending on climate of your kitchen. 9. Place in the fridge to chill overnight & enjoy!!!

Ingredients: 💗3–4 medium-sized beets, peeled and diced 💗1 tablespoon sea salt to every 1 cup Filtered water 💗Optional: Spices (such as caraway seeds, coriander seeds, or garlic) for flavor Equipment: - Clean, sanitized quart-sized glass jar with a tight-fitting lid - Clean, sanitized weight (small glass jar or spring like I have) Instructions: Prepare Beets: Wash, peel, and dice the beets into small, uniform pieces. Create Brine: Dissolve the sea salt in a cup of filtered water to create a brine solution. Ensure the salt is fully dissolved. Pack Jar: Place the diced beets into the glass jar, leaving about an inch of space at the top. If using spices, sprinkle them between the layers of beets. Add Brine: Pour the brine solution over the beets, making sure they are fully submerged. Insert Weight: Place a sanitized weight (such as a small glass jar or spring) on top of the beets to keep them submerged in the brine. Seal Jar: Secure the lid tightly on the jar with either a fermentation lid or airtight lid. Be sure to release the air each day if using an airtight lid. Fermentation: Place the jar in a cool, dark place for about 7–10 days. Check the beets periodically to ensure they stay submerged and taste them to determine the desired level of fermentation. Taste Test: When the beets reach your preferred level of tanginess, remove the weight and place the jar in the refrigerator to slow down the fermentation process. Enjoy: Once chilled, your fermented beets are ready to eat! Part 2 of making my parents happy with my itty bitty-sized science experiments in their kitchen… Itty Bitty Fermentation: Grapes For the Lacto-Fermented Grapes: • 450g (1 lb) fresh grapes • 450g filtered water • 18g Himalayan sea salt (2% of combined grape + water weight) Fermentation Process: 1. Combine grapes, water, and salt in a clean glass jar 2. Place fermentation weight on top to keep grapes submerged 3. Cover with loose lid or cloth 4. Ferment at room temperature for 5 days For the Salad: • 1 cup cherry tomatoes, diced • 1 cup lacto-fermented grapes • 2-3 tablespoons pickled onions • Handful of fresh parsley • 1/2 cup avocado oil • 1/4 teaspoon sea salt Assembly: 1. Make parsley oil: Blend parsley, olive oil, and salt until smooth 2. Combine diced cherry tomatoes with fermented grapes 3. Add pickled onions 4. Drizzle with parsley oil 5. Spiced Fermented Carrots🥕🥕 A healthy fermented snack! I love the little added zing these carrots have from the fermentation process. Ingredients: - 5 medium Carrots - 2/3 cup Avocado Oil - 2 Tbsp Sesame Oil - 1 Tbsp Honey - 3 Tbsp Soy Sauce - 2 Tbsp Gochugaru - 2 Tbsp Rice Vinegar - 1 Tbsp Furikake Seasoning - Thumb of peeled Ginger - Masontops Fermentation Kit What I did: 1. Peel and cut carrots into spears. Add to a sterile fermentation jar with a thumb of peeled ginger. Fill with water to cover all the veggies. 2. Add 3% of that weight in salt to the water. Give a mix and add back to the jar. Attach Masontop weight and lid, and wait 5-7 days. Check for any signs of spoilage. 3. Remove the ginger and liquid and add Furikake seasoning. 4. In a pod heat up avocado oil and gochugaru. We just want to infuse the oil. Don’t not bring to a simmer just warm through. Let cool completely. 5. Add sesame oil, honey, soy sauce, and rice vinegar.
