Fiddlehead ferns, specifically ostrich fiddleheads ferns, are young, edible, typically foraged ferns found in wet forested areas. Fiddlehead refers to the state of growth they are in. Found in the north eastern parts of the US, they are only harvested once a year, in the month of May. This is the last week they are around this year and I’ve always wanted to try them. Slightly toxic raw, they need to be boiled for at least five minutes before eating. They are slightly nutty and remind me of asparagus, artichoke, and even mushrooms a bit. Ingredients: 1 lb fiddlehead ferns, washed and trimmed 2 tsp butter 2 cloves garlic 1 tbsp capers Juice of 1/2 blood orange 2 tbsp crushed toasted hazelnuts Preparation: 1. Thoroughly rinse the fiddleheads then dry. Trim the fiddleheads and remove any brown ends. 2. Bring a large pot of salted water to a boil and add fiddleheads. Cook for 5 minutes then transfer to an ice bath. Once cooled, remove from the ice bath and transfer to a drying rack. 3. Melt butter in a large pan on medium heat. Add the fiddleheads and sauté for 3-4 minutes. Add in the garlic, capers, and blood orange juice and cook for an additional 2-3 minutes or until the garlic is fragrant. 4. Garnish with crushed toasted hazelnuts.

Fiddleheads 101 This is how I clean fiddleheads. In a large bowl add the fiddleheads and fill with cold water. I let the water run and swish them around with my hands to remove the dirt and debris. Empty the water and repeat 3-4 times. Next fill with water again and grab a handful of fiddleheads and look and see if there is any debris left especially around the head part. Snap off any brown or broken edges and put in a large strainer. Once cleaned, run the water through one more time and strain all of it out. Bring a large stock pot full of water to a rolling boil. Add in the fiddleheads and boil 3 minutes. After the 3 minutes, drain the water, give the fiddleheads another rinse with cold water and throw into an ice bath. Once they are cooled down, drain, pour on a towel and pat dry with paper towels. I then add them into doubled up freezer safe bags to use for future meals. That is it. Pretty straight forward.
